The type of stone refers to the material it is made with. You can find many different types, including diamond, ceramic, natural stone, and synthetic. I would only suggest diamond if you’re planning to be sharpening only ceramic knives. Many of the stones you’ll find on Amazon or other retails are made of Corundum, which is a crystalline form of aluminium oxide. It’s a fine choice for a beginner sharpening stone.

The Japanese sharpening stone whetstone combo is about 9.1 in. in length. It's  multi-sided and actually looks like a block of wood. When you use the dark side or the medium grit side (#1000), soak it for about 2-3 minutes.  When finished, the ridge on the base which surrounds the stone will fit snugged into it. Even if the base wasn't there the stones friction will stay. Some of the good features of the base is actually the rubber stoppers to hold it on a dry surface. When you learn how to sharpen a pocket knife, doing it on one of these will help.

This 600/1,000 grit is my second Unimi knife sharpener, the first is 2,000/6,000 grit and I love them both. Both stones together produce very sharp and well polished knives that reduce the cutting effort and save time in the kitchen. I particularly appreciate that the manufacture printed the grit number on the side of each stone - that helps use the different grits in the proper sequence from the coarser to the finer. The stone comes with a non-slip silicone/rubber base which is very handy.
After you have completed a few passes over the stone on both sides, you can move to the final stage. This time it is P1 pressure, just enough pressure for you to control the knife. Ensure your stone is wet and now repeat the motions but with very very light pressure. You really need to focus here and ensure you are reaching the edge of the edge and again, just a few sweeps on both sides of the knife.
Hold the knife in your right hand (or left) with your index finger along the spine of the knife and be comfortable, hold it tight enough so it doesn’t move as you sharpen but you don’t need a death grip on it. Wear shoes and if possible stand on a mat that will absorb the impact of the knife if you drop it. (You won’t drop it but be safe…..move your feet if you drop it!).

The stone is of good quality. It can be used with water or oil - but not both at the same time of course :) ... What I really want to mention is that Hayneedle has amazing customer service - no joke! My stone was shipped from the mfg. not hayneedle whse and there was a chip on one corner. They said - we can't have that! ... So they took care of the whole matter with NO cost to me and they were very friendly as if I was doing them a favor!
Choose the style of stone. You'll need to choose a natural or synthetic stone that can be used wet (soaked in water), with oil, or dry. There are also diamond stones that are actually very small diamonds attached to a metal surface. Stones that are soaked in water are softer stones which means you can quickly sharpen your knives. Unfortunately, these stones will wear down faster than the others. Oil stones are the least expensive and they're made of a harder material.[2]

Grinding is generally done with some type of sharpening stone. Sharpening stones come in coarse and fine grits and can be described as hard or soft based on whether the grit comes free of the stone with use. Many sources of naturally occurring stones exist around the world; some types known to the ancient world are no longer used, due to exhaustion of former resources or the ready availability of superior alternatives. Arkansas, USA is one source for honing stones, which are traditionally used with water or honing oil. India is another traditional source for stones. Ceramic hones are also common, especially for fine grit size. Japanese water stones (both artificial and natural) come in very fine grits. Before use, they are soaked in water, then flushed with water occasionally to expose new stone material to the knife blade. The mixture of water and abraded stone and knife material is known as slurry, which can assist with the polishing of the knife edge and help sharpen the blade. Generally, these are more costly than oilstones. Coated hones, which have an abrasive, sometimes diamonds, on a base of plastic or metal, are also available.
You've acquired a good chef's knife, you're using it almost daily to make tasty dinners for the family, and it's stored in a nice knife rack or a magnet for safekeeping. So why stop there? Keeping that knife's edge fine will make cooking not only safer but, let's face it, much more fun. Rest your knife on the stone at your chosen angle. An easy method for determining the angle by eye is to visualize a 45 degree angle and then take half that amount. That will give you a ballpark estimate of the angle and then you can adjust accordingly up or down. With a slicing action bring the length of the knife across the stone with a motion that starts with the heel of the knife on the stone and ends with the point of the knife. The motion should resemble a sweeping arc pattern across your stone. Be very careful to maintain the angle of the knife on the stone. Longer curved knives provide additional challenges but as long as you can maintain the angle you will be sharpening very effectively. Repeat this process on the other side of the knife and continue repeating until you have sharpened your knife though all your stone grits.
Your primary goal is just to improve the edge, make it a little bit sharper. Manage you’re expectations and don’t worry about getting the knife ready for eye surgery on day one. Ignore all those YouTube videos where you see folks performing miracles with their knives, forget that completely. You just want to make the knife a little less dull and by doing so you will achieve what most people will never even attempt. You want to get a taste of sharpening success and it can happen quickly. A sharpening stone is a stone that has got a coarse side and usually a finer side, and that is going to take and re-shape your edge and get it back down thin enough in order to sharpen it. You are basically taking something that is blunt and thinning it back down. You have to remove all of this extra metal and get it back down to where it is thin enough to cut. Very simply, all a knife is is a very thin piece of steel to split whatever you are cutting. If the knife is obviously thicker, it is like trying to cut something with a chisel; it is not going to happen.
