Our second entry from Chef’s Choice is the 463 Pronto Santoku. This manual sharpener is super-simple to use and delivers fast, high quality results every time. While this is a “2-stage” system there’s nothing complicated about it. One slot is for sharpening and the other for honing. Both stages utilize diamond abrasive surfaces so your blades will retain its edge for a good long time.
The stone – With a sharpening stone, the process is essentially the same as with the stick sharpener. The only difference is that you don’t hold the stone, you place it into its own holder (If it comes with one. If it doesn’t you’ll need to improvise) on a flat surface. Push the knife down the stone several times while holding it at a shallow angle and then flip it and pull it toward you several times to get the other side of the blade.

This wedge ends up short of a "point" to a much larger degree than the picture would indicate. The metal stops short, but then there is black non-slide "tape" applied to one side, and white "slide" tape applied to the other side, which makes the wedge even thicker than it appears in the photo, which means that in practice the end of wedge is even more truncated. So I have a hard time supporting my knives accurately on this wedge while sliding them down into contact with my stones. Prior to buying this wedge I just used a wooden wedge I cut off of a 3" by 3" post using a miter saw, said wedgewhich has a much less truncated end. That wooden wedge unfortunately absorbs water from my Japanese Waterstones. But I will try spraying polyurethane on that wooden wedge to help waterproof itand try again. If that doesn't work I will try to find a 3" by 3" plastic trim board somewhere and cut a wedge off the end of that. Note that you can buy 20 degree plastic wedges, but this is the first one I have found that does 15 degrees (nominal.) TO USE: Soak stone in water for no more than 5-10 minutes. Place stone on a damp cloth with the courser 400 grit side (dark green) facing up. Hold the knife so that it’s flat and perpendicular to the block, with the blade facing left. Holding the knife at a 20-degree angle, slowly sweep the edge of the blade from left to right down the length of the stone and continue until sharp. If stone starts to feel too dry, add more water. Be patient and take your time. Flip knife over and repeat on the other side (now moving from right to left). Be sure to sharpen both sides evenly. To polish the blade further, flip stone over to the fine 1000 grit side (light green) and repeat the process. When blade is honed to desired sharpness, wash and dry your knife. To clean your stone, simply rinse with water, wipe away any remaining metal residue with a rag, rinse again, then dry.

I really liked this whetstone! I had a Smith's pocket sharpener that could get my knife sharp enough for working around in the yard (I have an Opinel no.8). However, in doing a little research I found that the sharpener was only around 600 grit on the finest setting. So this BearMoo 1000/4000 grit looked like the perfect step up, and it turned out to be the perfect stone for me. The pictures are an accurate representation of what you get. The removable rubber base was helpful when switching from one side to the next, and it kept the stone from sliding around. The instructions say that the stone can work with either water or oil, but that water is preferred. It said to leave the stone soaking in water for five minutes, and the stone worked like a champ. I especially liked how the instructions gave you an approximate time of how long the stone takes to sharpen a knife -- it just helped give me an idea that it would take about 15-20 minutes on the 1000 grit side, and then another 10-15 minutes on the 4000 grit. Just turn on a TV show!
A blade's sharpness may be tested by checking if it "bites"—begins to cut by being drawn across an object without pressure. Specialized sticks exist to check bite, though one can also use a soft ballpoint pen, such as the common white Bic Stic. A thumbnail may be used at the risk of a cut, or the edge of a sheet of paper. For kitchen knives, various vegetables may be used to check bite, notably carrots, tomatoes, or cucumbers. In testing in this way, any nicks are felt as obstacles.
However, due to limited natural deposits and extensive quarrying over the centuries, true, high quality, Japanese water stones are now few and far between and are very expensive. Thus, various companies are now producing synthetic Japanese Water Stones which generally have a more consistent composition and grit size than natural stones as well as often begin somewhat harder and thus, lasting a bit longer; not to mention being cheaper to purchase.
Hi Caide, our most popular stone at the moment is our Grunwerg 1000/3000 grit whetstone from speaking to our customers it’s definitely down to the pretty competitive price, but also they have said that the finish on the knife is just as good as some of our more expensive ones, the main difference is it doesn’t seem to last as long. For one that does last and leave a good finish then our Minosharp 1000 grit whetstone is also popular.
You will also need at least one finer stone. Once the shape of an edge is established, successively finer grits are used to refine the edge improving the quality of the cut it delivers. A dull edge will not cut well and should be shaped with a coarse stone. An edge sharpened on a coarse stone will cut better than a dull one, but still won’t be ideal and should be improved with a finer stone. As you progress through finer stones, the cutting edge will continue to improve. How many and how fine these stones need to be varies depending on how fine an edge you require.
Put the pointed, narrow end of the sharpener up against the open end of the gut hook. The narrow, pointed end of the sharpener should face in toward the thickness of the blade, away from the edge of the gut hook. Match the angle of the sharpener to the original edge angle. This will maintain the correct sharpening angle and prevent you from getting cut by the blade tip. Hold the same angle when sharpening each side of the gut hook.
As you continue to repeat strokes on the first time, eventually a tiny burr will form on the other side of the blade. To check for it, place the blade on your thumb, and pull it backwards. If the burr has formed, it should catch slightly on your thumb (with really fine grit stones, say 2000 or above, you won't feel this). This may take up to 30 or 40 strokes, and is the indication that you should switch and start sharpening the other side.
Silicone Carbide whetstones on the other hand, are the fastest cutting of the three types of oil stones and the stones made by Norton are called Crystolon Stones. Also they too are graded as either fine, medium, or coarse stones depending on their grit. But, although these stones will not produce an edge as fine as Arkansas Oil Stones or India Oil Stones, their fast cutting ability makes them ideal for sharpening tools as well as for cutting the initial edge bevel on extremely dull knives or repairing the edge on damaged blades. Last, because they sharpen so quickly, it a common practice to start with a coarse Crystolon Oil Stone and then progress to either a medium or fine India Oil Stone and then to finish with an Arkansas Oil Stone.
A diamond plate is a steel plate, sometimes mounted on a plastic or resin base, coated with diamond grit, an abrasive that will grind metal. When they are mounted they are sometimes known as diamond stones. The plate may have a series of holes cut in it that capture the swarf cast off as grinding takes place, and cuts costs by reducing the amount of abrasive surface area on each plate. Diamond plates can serve many purposes including sharpening steel tools, and for maintaining the flatness of man-made waterstones, which can become grooved or hollowed in use. Truing (flattening a stone whose shape has been changed as it wears away) is widely considered essential to the sharpening process but some hand sharpening techniques utilise the high points of a non-true stone. As the only part of a diamond plate to wear away is a very thin coating of grit and adhesive, and in a good diamond plate this wear is minimal due to diamond's hardness, a diamond plate retains its flatness. Rubbing the diamond plate on a whetstone to true (flatten) the whetstone is a modern alternative to more traditional truing methods.
Diamond hones are made from very small, industrial grade, diamonds adhered to the face of a metal or plastic plate. Also, because Diamonds are so much harder than any of the other sharpening materials, they tend to cut very fast and last much longer than the other whetstone materials. But, they are also often more expensive to purchase. In addition, Diamond Stones generally consist of three different styles consisting of a solid metal plate coated with an adhesive and diamond dust with holes in the plate to allow the swarf to escape, a solid plate without holes for sharpening tools with corners that might catch in the holes, and a plastic plate with islands of exposed plastic interspersed with the adhesive and diamond dust to act as a lubricant.
Why, then, do so many of us shy away from the task? To put it bluntly, it's because it's a rather daunting process for the beginner. Your image of knife sharpening may consist of a hyper-masculine chef slashing away violently at a steel rod (we're looking at you, Gordon). Conversely, you might have seen cooks meticulously and methodically stroking their blade up and down a Japanese waterstone with more intricate attention to detail than a Flemish landscape.
In addition, the most prized of the natural Japanese Water Stones are quarried in the Narutaki District north of Kyoto, Japan and are commonly available as either bench stones or pocket stones in grits ranging from 120 to 12,000. On the other hand, synthetic water stones are made from Aluminum Oxide and commonly available as either bench stones or pocket stones as well in grits ranging from 220 to 8,000 and, although this is the same abrasive material used to make India Oil Stones, the difference between the two is that the binder that holds the abrasive together enables Water Stones to be much softer than India Oil Stones which, in turn, promotes faster cutting because the worn abrasive material breaks away more quickly and is replaced with fresh, sharp, abrasive material more quickly. In addition, because water stones do not become glazed or loaded with swarf like oil stones can, new abrasive particles are constantly exposed as the stone wears so it continues to cut consistently. Plus, they can be lubricated effectively with water (rather than oil which can ruin some water stones) which combines with the fine particles of abrasive from the surface of the stone to form a slurry which polishes the bevel as the stone cuts. However, it should also be noted that Water Stones do become uneven significantly faster than other types of whetstones although, their softness does make them easier to true again.

The final Chef’s Choice sharpener on our list is the 316 Diamond Sharpener. Like the 15XV the 316 is at its best when used to sharpen Asian-style knives and it does so with unflinching effectiveness and speed. This is a compact, 2-stage electric sharpener that produces the 15 degree edge so favored in Asian cutlery. Ideal for the preparation of sashimi or sushi.
An important but often confusing area of sharpening is knowing when you're done with one stone and ready for the next finer grit. On coarse stones it is very easy. When you sharpen one side you will notice a burr forming on the opposite side of the edge. This burr is hard to see but is easy to feel. Very carefully feel for the burr by gently running your hand from the spine to the edge. (Do not run your finger along the knife edge from heel to tip, that's only asking for trouble!) A burr is formed when your stone removes material directly at the edge. The burr will move from one side of your knife to another as you alternate sharpening sides. Make sure you have felt the burr jump between both sides before you move on to the next finer stone. That will ensure that you have sharpened both sides effectively. The finer grits are done the same way but the burr is much smaller. On the finest grits you may not be able to notice the burr at all. Testing the knife sharpness will tell you when you're done. When a whetstone is used to cut metal, it acts like sandpaper by removing small particles of metal (aka “swarf”) with each pass of the blade over the stone. Therefore, whetstones with more coarse grits cut faster than those with finer grits and, at the same time, soft whetstones cut faster than hard whetstones because each pass of the blade over both types of whetstones not only removes fine particles of metal from the blade, it also removes fine particles from the surface of the whetstone (aka “slurry”) which continuously exposes new cutting crystals. However, if the swarf is allowed to build up on the surface of the whetstone during sharpening, it will clog the stone and drastically diminish its effectiveness. Therefore, some whetstones require water to lubricate the stone and suspend the swarf whereas, other whetstones require oil to lubricate the stone and suspend the swarf.
The kind of tech we love: compact, reliable, durable, attractive and cheap. Purists may feel that other sharpeners will produce a more perfect result but for 99% of the human race this sharpener will be everything the doctor ordered. Your blades stay sharp for a good long time thanks to the 2-stage sharpening process and if you’re a left handed chef you’ll love the fact that it works just as effectively for you as for anyone else.
Sharpening is really two processes: Grinding and honing. Grinding is simply the removal of metal. Honing is a precision abrasion process in which a relatively small amount of material is removed from the surface by the means of abrasive stones. Once you have the right shape, usually using a more aggressive grit, you then switch to a finer grit to hone the edge.
A sharpening stone is a stone that has got a coarse side and usually a finer side, and that is going to take and re-shape your edge and get it back down thin enough in order to sharpen it. You are basically taking something that is blunt and thinning it back down. You have to remove all of this extra metal and get it back down to where it is thin enough to cut. Very simply, all a knife is is a very thin piece of steel to split whatever you are cutting. If the knife is obviously thicker, it is like trying to cut something with a chisel; it is not going to happen.
A: For many years there was a heated debate around this topic with manufacturer’s stating flatly the notion their products actually damaged knives was absurd, and many professional chefs claiming not only was it not absurd, it was common for mechanical sharpeners to damage expensive cutlery. So who was right? To a certain extent they both were. The manufacturers were correct in asserting that if you followed the instructions to the letter there was little if any chance your knives would be damaged. However, in reality few people actually followed the instructions to the letter and when they veered from the recommended course the potential was there for damage.
Our large selection of stones from many well-known manufacturers will allow connoisseurs to find the ideal stone for their needs. Because all manufacturers formulate their stones to emphasize a different mix of qualities, and because these qualities can vary widely between different stones, most woodworkers choose stones from several manufacturers to build up an optimal set of sharpening stones. Then again, once you get to know the characteristics of certain types of stone, you may find one supplier who will provide all the stones you need. Sometimes this can be an advantage. But there is no one size that fits all; each stone must fit your needs and work style.
