Chefs will do this every day, and there's no reason you shouldn't too. Before cooking, or after you've done the washing up, honing your knife will help keep it in good condition. "When you're using a honing steel, you're not actually removing any metal at all, just re-straightening that edge, to get it back in line," says Authbert. Remember that you'll still need to sharpen it every two or three months.

Hold your knife at approximately 20° in relation to the honing rod. Your angle doesn't need to be exact, just approximate. Whatever angle you decide to choose, or unwittingly end up choosing, make sure to maintain the same angle throughout the honing process. Changing the angle used during the honing process won't smooth out the metal in the blade as much as using a consistent angle will.[4]

Whichever method you choose, be it a waterstone (also known as a whetstone), or a pull-through (either V-shaped or ceramic wheels) it's important to regularly hone your knife with a honing steel, which we'll also cover below. You'll be pleased to hear that you won't have to reach for the stones too regularly – once every two or three months should suffice. 
Just keep at it and concentrate, visualize that edge and bevel as you sharpen and keep in mind what you are trying to achieve. You need to do this on both sides, for me, I found that the hardest part, getting the other side of the knife to match the side I started on. I start on the right side of the blade at the tip and work my way towards the heel. When I do the “back” of the knife, I start at the heel and work towards the tip.

If in doubt or just learning, a safe bet is a set of quality synthetic stones. They’re the easiest to use, require the least maintenance and are the most forgiving. If you’re just starting out we highly recommend the Naniwa Sharpening Stones. They’re excellent quality, reliable, durable and no soaking time is required. For advanced users we recommend the Naniwa Pro sharpening stones or Kaiden Ceramics.

Vielsalm Coticule on the other hand generally occurs in much more narrow layers sandwiched between the slate layer and the Belgian Blue layer and thus, it is both less plentiful and more expensive than Belgian Blue stone. Also, Coticule is divided into different grades and sometimes displays blemishes on the surface due to its proximity to the slate layer. Furthermore, it is somewhat harder than Belgium Blue stone and, due to its brittleness, it is bonded to a substrate layer of hard slate prior to sale to prevent the stone from breaking during use.
Table mounted device – Typically the manual powered table mounted sharpener looks virtually identical to the electric powered sharpener with a slot for each stage. Where they differ is that each slot in the manual powered sharpener has only one groove and you pull the blade through this groove toward you to sharpen the blade. Once the blade is sufficiently sharp you place it in the honing groove to refine the edge and pull it toward you again several times. If there is a third, cleaning, stage you repeat the process for that stage as well.
A sharpening stone is made of particles of abrasive material that are sintered or bonded together. The blade is moved across the stone and the steel is worn away, which creates the edge. However, at the same time, the stone is also worn away to reveal new, coarse particles. As a general rule, the softer the stone, the more rapidly it will wear and will be more aggressive in use. Harder stones don’t wear as quickly.
"How do I use this daunting metal rod?" I hear you ask. Well, it's not too hard, really. The best way for a beginner is to balance the steel on a surface with the tip secured by a damp tea towel. You want to get that angle right, whether it's around 15 degrees for a Japanese knife or 20 degrees on a German or French blade. Then swipe slowly down, away from you, making sure the whole blade is honed – around five swipes on each side should do. 
The truth is that there is no one recommendation that we can make that will meet everyone’s needs. Every sharpener’s needs are different and every sharpening toolkit will be different. In order to help beginning sharpeners get started with good sharpening stones to build around, we need to understand their individual needs. So with that in mind, let’s look at the basic needs of a beginning sharpener.
These are unquestionably great starter stones. After all the sharpening done over the course of a couple days, they're still perfectly flat, showing little to no signs of wearing down. Mind you I did watch tons of how-to videos online before undergoing the endeavor, so I knew how to try to make the stone wear evenly. But, my 15 year old nephew who was working on the Ontario, as I told him he could have it, if he wanted to fix it up, didn't watch all those videos and I didn't see any uneven wear on his stone after working it about a half hour either.
Modern synthetic stones are generally of equal quality to natural stones, and are often considered superior in sharpening performance due to consistency of particle size and control over the properties of the stones. For example, the proportional content of abrasive particles as opposed to base or "binder" materials can be controlled to make the stone cut faster or slower, as desired.[7] Natural stones are often prized for their natural beauty as stones and their rarity, adding value as collectors' items. Furthermore, each natural stone is different, and there are rare natural stones that contain abrasive particles in grit sizes finer than are currently available in artificial stones.[citation needed]

Unfortunately, the arrays of modern whetstone can be bewildering to the inexperienced sharpeners that so often times many of them end up with a crap or wrong decision on stone type for their utensils. The most difficult to determine is whether the whetstone is fake or fabricated with low quality of materials. To avoid this you can only go for the reliable brand of a whetstone.

I'm a novice knife sharpener. I've had to unlearn what my grandpa taught me in order to use these. So far, I've had decent but mixed results. I've switched to my cheap 200/400-ish cheap tool stone from harbor freight for cutting a bevel when the blade has either been damaged or did not have a proper bevel. The 400/1000 grit stone in this kit is soft. Very soft. I have bowled it out several times. It makes keeping a steady angle difficult. But these stones at this price point are meant for learning, and for that they serve their purpose.

Absolutely solid item craftsmanship is top notch in general as to be expected from wazoo My only complaint is about my stone personally it's pretty bland and all white lacking in uniqueness and character there is one spot that shows some color when wet and it looks like it might be a weak point right on the top corner of the rounded end it may end up weakening with use and break off especially if it gets dropped but this is purely a fault and with the stone it's self and not with wazoo

Thus, due to both its availability and its composition, it has been mined since ancient times for use as arrowheads and spear heads as well as in more modern times for use as sharpening stones.
Beginning on the right side of the knife, move from tip to heel and heel to tip, then flip the knife and repeat. For the left side, it’s opposite—start at the top of the stone to reach the heel area completely. So, you will move from heel to tip and then tip to heel. Remember to apply and release pressure as you did earlier, exactly the same as in Step 2, but with light, refining pressure.

Just to prove that we're not merely sharpening geeks, here's an interesting side note. The word whet pops up in some unexpected places. A small species of owl is called the saw-whet owl because the sound it makes reminded people of the sound made when sharpening a saw with a file. And the phrase "to whet your appetite" comes from the idea of your hunger growing sharper at the thought of food.
Also natural stones have a random grit size that gives a long lasting edge. Basically the random grits create varying sizes of micro-serration in the blade that wear down at a different rate, therefore longer edge retention. Whether this is true or not we really like natural stone, especially for sharpening tradition single bevel Japanese knives. Use natural stones with water – it’s far cheaper than sake.

Hold the knife in your right hand (or left) with your index finger along the spine of the knife and be comfortable, hold it tight enough so it doesn’t move as you sharpen but you don’t need a death grip on it. Wear shoes and if possible stand on a mat that will absorb the impact of the knife if you drop it. (You won’t drop it but be safe…..move your feet if you drop it!).


Meanwhile, if you want something that you can use to sharpen a variety of knives and edges, including small and pointed tools, you might want to consider the DMT WM8CX-WB 8-Inch Duo Sharp Plus Bench Stone – Coarse/Extra Coarse with Base. For less than a hundred bucks, you can even use it to repair a damaged edge because of its extra-coarse diamonds.
These are very popular stones. 8" Dia-Sharps have a single grit per stone making them more expensive, but at 8" by 3" they are wider than the 8" DuoSharps, offering a good working surface. The 8" Dia-Sharp line also has the widest range of grits available from DMT, with extra extra coarse, medium extra fine and extra extra fine options not available in other sizes, so it is good line to consider. One coarse and one fine stone is a good starting point.
You might not need to spend hundreds of pounds to get the best knife sharpener, but you do need to know what you're doing. Warner gave me a crash course in the technique. As a newbie to this method, it took a while to get used to (especially since Warner handed me a knife that had never previously been sharpened) but after half an hour's practice and a little encouragement, I got the hang of it. Here's what I learned...
High Grit Stones: These are also known as finishing stones with the number range going up to 8000, and give you a super refined edge.  They work great with Western knives as they cutting edge resembles a “U” as opposed to a “V”. If you are using your knife to cut meat, then you can happily stop at 4000 or 6000 grit. If you are only using it for vegetables or fruit go all the way to the 8000.

Push the point you want to sharpen with your fingers. While keeping the angle and pushing the point with your fingers, stroke the blade until it reaches the other edge of the whetstone, then pull the blade back until it reaches the edge of the whetstone. This back and forth is counted as one stroke. Repeat it for about five strokes until you can see or feel some small burrs (edge curvatures) Then move the position of your fingers to where you have not sharpened yet, and repeat this five strokes of sharpening processed from the tip to the base of the blade.

You need to adjust your fingers as you move the knife back and forth. Because sharpening takes place under your fingers, start with them at the tip and, as you pull the knife back toward you, release pressure completely and pause. Then, shift your fingers just a little down the blade toward the heel. This finger dance is critical and takes time getting used to.

You are basically taking something that is blunt and thinning it back down. You have to remove all of this extra metal and get it back down to where it is thin enough to cut. Very simply, all a knife is is a very thin piece of steel to split whatever you are cutting. You must put the knife blade's position at the perfect angle which is called "against the stone." What's important is the blade should be facing opposite from you. Where you've determined where the bevel angle is located, then this is what you will position against the stone. It's a good idea to know the differences between various angles for certain blade uses. There's a certain height of the blade that it should be from the stone. You'll be able to find various charts on height of the blade online. Normally, for a pocket knife or kitchen knife, it'll be 17° - 22° angle against the stone. The "Rule of thumb" is the smaller the angle, the sharper the knife. Most makers will have it in the instruction or on their official website.
So, as you can see, there are numerous different types and grades of whetstones on the market today and each has its advantages and disadvantages. Therefore, the right practice to choose the right sharpening stone for you is to choose a whetstone material based upon how fast you need to remove metal and how fine an edge you need. For instance, although they are often the most expensive type of whetstone, diamond hones generally cut the fastest even in their finer grits followed by Crystolon Stones and then India Stones which are then generally followed by Japanese Water Stones and then by Novaculite, Belgian Blue, and Coticule whetstones in terms of how fast they remove metal. However, it should also be noted that the rougher an edge is, the less sharp it is while, the more polished an edge is, the sharper it is and thus, rough edges are fine for some tools while other tools require a much finer edge and, hunting knives require the finest edge of all. Therefore, the trick to choosing the proper whetstone for any given sharpening purpose is to purchase multiple stones with varying grits to accomplish each given task from cutting an initial bevel or defining a damaged edge to refining an existing edge to polishing it. The stone – With a sharpening stone, the process is essentially the same as with the stick sharpener. The only difference is that you don’t hold the stone, you place it into its own holder (If it comes with one. If it doesn’t you’ll need to improvise) on a flat surface. Push the knife down the stone several times while holding it at a shallow angle and then flip it and pull it toward you several times to get the other side of the blade.
Japanese water stones – both natural and synthetic – are known for their superior sharpening performance, not only for Japanese tools, but also on their Western equivalents. The loosely bonded abrasive grit is washed out very quickly, as it blunts during the sharpening process; this exposes new, sharp, particles that can get to work on the blade. Water stones are lubricated only with water! Never use oil!
Shapton Glass 320, 500, 1,000, 2,000 and 16,000. I have the 4,000, and 8,000, they are absolutely fine, great in fact but I just don’t use them as much as the others. These stones excel on knives made of hard steel, the hardest steel is no match for these. This does not mean you can’t sharpen hard knives on the Naniwa brand of course, you can. I have been using this particular brand of stone for many years and I absolutely love them.
The stick – With a stick sharpener hold the sharpener in front of you (facing away from you) with one hand and the handle in the other hand. Hold the base of the knife against the base of the tip at a slight angle and then push the blade along the stick pulling it across the stick at the same time. The tip of the blade should cross the end of the stick. To sharpen the other side of the blade place it under the stick and repeat the process making sure to reverse the angle at which you are holding the knife against the stick.

if you have regular kitchen knives it will not work- first its to deep and the blade does not stick out, not dinner knives but cooking knives. of all the knives i put in it only 1 was wide enough to stick out. the device does not hold the blades. all the blades tested fell out of it, even a hunting knife, maybe its for 1 type of knife and they are selling it as the must have tool for all.. that said sell something useless for a few bucks that most cant use, they got a few bucks that most will blow off and not worry about a refund.. DONT WASTE YOUR MONEY.
The speed and polishing ability of waterstones attract many sharpeners. Waterstones sharpen quickly and are available in fine polishing grits not found in other stone types. The ability to flatten the stones is a necessity when sharpening with waterstones, so a starting set should include a flattening stone of some kind. When the block is intended for installation on a bench it is called a bench stone. Small, portable stones (commonly made of bonded abrasive) are called pocket stones. Being smaller, they are more portable than bench stones but present difficulty in maintaining a consistent angle and pressure when drawing the stone along larger blades. However, they still can form a good edge. Frequently, fine grained pocket stones are used for honing, especially "in the field". Despite being a homophone with wet in most dialects of modern English, whetstones do not need to be lubricated with oil or water, although it is very common to do so. Lubrication aids the cutting action and carries swarf away.
