This 9-inch honing steel is the perfect length for most people. Just slightly larger than the typical chef’s knife and slicing knife (usually the longest knives in a set), this rod will not be too much for most people to handle. Unlike the 12 and 14-inch rods featured further up this list, this 9-inch rod should be very easy to confidently and safely control.
I really like this stone. The 1000/4000 grit combination is perfect for my needs. I'm a woodturner, and belong to a club that brings in professional turners from around the world. One had an eye opening test of sharpness. He stacked around 25 new razor blades in a box with one open side. The box assured that the blades were in perfect alignment. If you looked at the blades' sharp ends head on, all you saw was black. His point was that if you can see the edge, the blade is not sharp. Any reflection from the edge, again, facing it head on, is a dull spot. My long story leads to the fact that I was able to sharpen several knives to the point of not seeing the edge. This is not the stone to use if you are trying to remove nicks from a blade. A lower grit will do that job. This is for putting a fine, "invisible" edge on the blade, and with the right technique, that's what it will do. Another thing to consider is the fact that these stones are "sacrificial" A stone wears because it is deliberately giving up dull surface particles to expose the sharp ones below them. Anyone expecting a stone to last forever is mistaken. Bottom line? I think this is a great stone that takes my knives to the level of sharpness I need in both woodworking and cooking. I also like the rubber frame it sits in, giving you much better control over the stone. Your efforts can go into sharpening without having to steady the stone on your workbench or countertop.
While it may still feel like there is a lot to choose from, you don’t need a lot of of stones, you just a several good varieties to choose from. To summarize I will indicate below what my favourite stones are in each grit. Yes you can mix up the brands when sharpening but my recommendation is to buy a combination of 2-3 stones of the same brand and go from there.

Slight learning curve but worth it in the end. The item is actually Japanese, with almost no English on it and everything written in Kanji. The Presto EverSharp 08800 electric knife sharpener gets great reviews. In our test, though, its flimsy motor instantly bogged down when our knife contacted its sharpening wheels—and even light pressure threatened to stop the the sharpening wheels entirely. The high, wide guide frames meant it couldn’t sharpen the last ¾ inch of a blade, an unacceptable shortcoming. We’ll take our experience over the reviews.
The basic concept of sharpening is simple – you're using an abrasive edge to remove metal – but the knife you buy may alter the method you should use. The thumbnail test (not recommended for novices) - With this test you take your newly sharpened blade and run it oh-so-delicately over your thumbnail. If you feel it digging in even a tiny bit, it’s likely sharp enough. If on the other hand it just slips and slides across the surface of your nail it’s not sharp yet. Again, this test is only recommended for people with lots of experience handling knives and even then they’d probably be better off just grabbing a tomato or a piece of paper.

The angle on a Buck Knife is set based upon how we feel the knife will be used. Heavy use needs a strong and blunt "V" while skinning or filleting would need a deeper but more vulnerable "V". We tend to grind to 13-16 degrees per side (see illustrations). If you match the existing edge angle and hold the knife against the stone to cut evenly across the edge grind, you will produce an edge with a similar angle.

Sharpening is really two processes: Grinding and honing. Grinding is simply the removal of metal. Honing is a precision abrasion process in which a relatively small amount of material is removed from the surface by the means of abrasive stones. Once you have the right shape, usually using a more aggressive grit, you then switch to a finer grit to hone the edge.
As you probably have guessed, knives are easier to sharpen on longer stones. The width of the stone is less important than the length when sharpening knives. The longer stone allows for longer sharpening strokes and contributes to faster sharpening. The longer strokes mean fewer strokes across your stone, making it easier to maintain a consistent sharpening angle. As a rule of thumb, a small knife can easily be sharpened on a large stone, but a large knife cannot easily be sharpened on a small stone.
Looking at the performance, it is hard to find a sharpening stone on the market that performs better than this one. This one is simply irreplaceable. Furthermore, using this stone is a straightforward process. You just sprinkle some water on the surface and then push and pull your blade across. After a few strokes, your knife is sharp and ready. In addition, it doesn’t require too much water consumption. You don’t have to stop every now and then to sprinkle water.
The coarse stone will cut the metal off quicker but it is going to give you a rougher edge but that way the job gets done quicker, without the oil. It is not as messy. This is just a real simple set up. If you do wood work you can make a little wooden box and rout it out. In this particular case it is just a 2x4, stone traced out, finishing nails tapped down so they are deeper than the stone so when you drop the stone in, if you are at a workbench you can C-clamp it down in place or you can hold on to it.
Japanese whetstones (also called water stones) – both natural and synthetic – are known for their quick-working qualities, not only for Japanese blades, but also for their Western equivalents. The small particles that do the cutting are loosely bound together in the stone, and so during sharpening with the whetstone, the surface particles are quickly washed out, allowing new, sharp, particles to start working on the blade. These whetstones must be lubricated only with water! Never use oil or other lubricants!
We tested eight other honing rods alongside our pick. Three were ceramic: The Cooks Standard 12″, the Mac black ceramic 10.5″, and the Messermeister 12″. Five were traditional steel hones: Three by Messermeister (regular, fine, and Avanta), a dual-textured fine-and-smooth “combination cut” Victorinox, and a Winware, all 12 inches in length. With one exception, we set a top price of about $40, which eliminated the professional-grade steels made by Friedrich Dick; these are standard in the butchering trade, but few home cooks need their extreme durability and specialization. During testing, we found all the traditional steel honing rods to be too rough on hard Japanese-style blades, causing them to chip, and their slick surfaces made blades of all types slip and skip. The three ceramic rods, like our top pick, offered a slightly grippy surface that made it easy to slide the knife blades smoothly along their length, which is key to good honing. But all were somewhat coarser than the Idahone, so the Idahone was less abrasive to the blades. A shinkansen is a Japanese-style pull-through sharpener named after the famous bullet train. It features two sets of ceramic wheels set at the right angle for sharpening a Japanese blade, which takes out the guesswork of the waterstone. Simply hold the handle with your left hand, then saw back and forth gently through the coarser wheel to sharpen, before switching to the finer wheel to polish.

A: For many years there was a heated debate around this topic with manufacturer’s stating flatly the notion their products actually damaged knives was absurd, and many professional chefs claiming not only was it not absurd, it was common for mechanical sharpeners to damage expensive cutlery. So who was right? To a certain extent they both were. Whetstones may be natural or artificial stones. Artificial stones usually come in the form of a bonded abrasive composed of a ceramic such as silicon carbide (carborundum) or of aluminium oxide (corundum).
