Soaked stone for about 20 minutes, then when attempting to sharpen the blade, A red slurry ends up all over the blade. Even a couple sprays from a water bottle and a wipe with a microfiber appears to take material off the surface. Since it is not coming off evenly across the stone surface, it is now uneven and the stone appears to be unusable at this point.


Ceramic whetstones are meant to be used without water or oil, which means they can be used almost anywhere and are ideal for chefs or cooks who have limited working spaces. They will give you a very sharp blade and as their surface is very hard they will maintain their flat surfaces over the long-term, but as they have a fine grit, they can break if you drop the stone.

High Grit Stones: These are also known as finishing stones with the number range going up to 8000, and give you a super refined edge.  They work great with Western knives as they cutting edge resembles a “U” as opposed to a “V”. If you are using your knife to cut meat, then you can happily stop at 4000 or 6000 grit. If you are only using it for vegetables or fruit go all the way to the 8000.

For someone who sharpens blades only occasionally, and knows that they will not need to grind out a chip in the edge of the blade, for instance, a combination stone will suffice. The size that one chooses depends mostly on a trade off between cost and speed. The bigger the stone, the faster one can work. The smaller stones work just as well, they just take a little more time.

Learning sharpening technique requires focus even without worrying about the stone itself. Stones that require frequent flattening, soaking and cleaning, or that take a long time to create an edge can be a source of frustration to some beginning sharpeners. Keep in mind your willingness perform regular maintenance when choosing a starting set of stones.
Once sufficiently wet, it's time to position the stone on something solid, so it doesn't move about during sharpening. Many come with holders, but you can just place it on a slightly damp tea towel on the table. To the good stuff. I spent hours on my large survival knife starting to bring it from a 30-40 degree angle down to about a 15 degree angle. And it worked. Although the labor was long, it was completely worth every penny. I was able to shave my arm hair with it and cut through paper okay. I would recommend also purchasing a 6000 grain whetstone as well if you want true razor sharp knives. However this will repair heavily used knives. I would not recommend this if your knife has a huge gash in it though. At that point it is better to buy a new knife.

Before you start sharpening, soak the stone in water for around five to 10 minutes, until it absorbs the water and a liquid film appears on the surface. After soaking, splash some water on top, and re-splash during the process if it ever gets too dry. You'll get a dark, splotch of steel and stone building up on the stone while you're sharpening the blade. This is totally normal so just splash the stone with some water to clean it off and allow it to perform more efficiently.

I am just starting out sharpening with whet stones. I have found these stones to be very nice and the instructional videos that come along with the set on knifeplanet are extremely helpful to anyone starting out. Start off on the rough grit side of the stone. Check the grit on your stone, or the packaging that came with the stone, to identify which is which.
