On the other hand, the surfaces of knives that have been looked after may blacken a little, but this is a different type of iron oxide than ordinary reddish rust. This black oxidation is mainly triiron tetraoxide (Fe3O4). It coats the surface of the metal and prevents ordinary rust from getting in. It will not discolor food and poses no threat to hygiene.
Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.
Good for a quick touch up: As I mentioned, I think there is a case for owning both a manual and an electric knife sharpener. This is the use case I was talking about. Manual sharpeners are great for a quick touch up to your knives in between full sharpenings with the electric sharpener. You can even take them with you camping or to a vacation home to keep your knives fresh while you’re away from home.

Whetstones may be natural or artificial stones. Artificial stones usually come in the form of a bonded abrasive composed of a ceramic such as silicon carbide (carborundum) or of aluminium oxide (corundum). Bonded abrasives provide a faster cutting action than natural stones. They are commonly available as a double-sided block with a coarse grit on one side and a fine grit on the other enabling one stone to satisfy the basic requirements of sharpening. I would say they are worth the money. Go for it. I took a blunted Pampered Chef kitchen knife from completely dull to razor sharp in about an hour (of bumbling and repairing mistakes LOL) heavy grinding. If you have a severely damaged blade, grab one of those cheesey two sided stones from Harbor Freight to do your heavy grinding. From there these stones will work very well.


Feedback is something that is very important to most sharpeners, i.e. how the stone feels when you are using it. Does it feel smooth, creamy and silky or does it feel hard and scratchy. While feedback, pleasant or unpleasant may be a purchase deterring factor it really doesn’t have any effect on level of sharpness that the stone can deliver. Unless of course the feedback is so distracting that it hinders the sharpeners focus and enjoyment and as a result, the sharpener doesn’t like what he/she is doing so that ultimately it does have the potential to negatively impact the results.

Before I even begin discussing much else about this sharpener I would like to take a moment to discuss its four sharpening slots. Upon reading consumer reviews, I found that many people were confused by the fact that there were four slots and mistakenly believed that this was a four stage sharpener. This is a two stage sharpener. It has one stage with a rough grit and one stage with a fine grit so that you can adjust the type of sharpening to the dullness of the blade.


Guided sharpening systems use a holder where you secure your knife, one or several sharpening sticks or conductors. Through the use of the holder, it is easy to select the right angle for sharpening. When using a guided sharpening system, there are two ways to sharpen your knife: a. Sharpening sticks are placed in the holder, after which you pull the knife along the different sharpening sticks, in order to sharpen it. b. The knife is secured in the holder, after which you pull the sharpening sticks along the blade. There are various systems for sale with a sharpening stone grinding the knife under a adjustable angle. The advantage is that you have a nice straight cutting edge. Disadvantage of this method is that it takes more time than grinding on a regular sharpening stone. Moreover, by sharpening with a fixed angle, you are much less flexible. So if you don't want to sharpen the knife in ze pre-fixed angle, you will still have to do it manually. The guided sharpening systems are highly recommendable for sharpening expensive pocket knives, because they provide a very nice cutting edge. By pasting the blade with adhesive tape, you can prevent any scratches caused by the clamping system. For kitchen knives, it is advisable to use a sharpening stone or electric grinder.

The word “Novaculite” is derived from the Latin word “novacula”, which means “razor stone” and is essentially a metamorphic, recrystallized, variety of Chert composed mostly of microcrystalline quartz that is found in the found in the Ouachita Mountains of Arkansas and Oklahoma and in the Marathon Uplift of  Deposited in the Devonian Period and the early Mississippian Subperiod some 410 to 325 million years ago and subjected to uplift and folding during the Ouachita orogeny of the Atokan Epoch (early Pennsylvanian Subperiod), Novaculite is a very tough stone that is resistant to erosion and thus, the various layers of Novaculite stand out as ridges in the Ouachita Mountains. Thus, due to both its availability and its composition, it has been mined since ancient times for use as arrowheads and spear heads as well as in more modern times for use as sharpening stones.

I give Sharp Pebble a top rating for two reasons. First, the company emailed a user guide for me to review and learn how to best use its product while it was being shipped to me. Wonderfully proactive. Second, the sharpening stone did a terrific job restoring the edge on my kitchen knives that had been woefully neglected. Ever rent a house and every knife in the kitchen has the edge of a butter knife? I was almost there. Now, the knives are cutting beautifully. I have only one suggestion for Sharp Pebble. While the stone includes a useful angle guide that can be attached to a blade and the guide gives clear steps on prepping the stone and how to hold the blade when sharpening, it does not illustrate the manner in which the blade needs to be moved across the stone. I had to go to Youtube to get some tips on the exact method. I have historically been very bad at putting an edge on a blade due to ignorance primarily. But with the help of the video and a good stone, I did an effective job. The base does a great job of holding the stone in place and is attractive in the kitchen.
I have this one and the axe/machete version as well. These are great sharpeners that make very short work of getting blades sharp. They take off quite a lot of material and are quite different than most other stone sharpeners I have used in the past, so I try to be conservative with my pressure as you see the chips fall when you pull the knife through. But, they absolutely work, and work very well. If you have a high use knife, this is a great way to keep it sharp and in service all the time. I use my large bushcraft knife a lot more now that I have this since I can sharpen it much faster and easier. I would not use this sharpener on precision instruments just because I prefer more control and try to preserve material on those types on knives. But, bottom line, I get more work done and much faster now that I have this.
Our favorite way to sharpen a blade is to use a whetstone—a rectangular block that works almost like sandpaper, helping to straighten and refine the cutting edge on the blade as you slide the knife across it. Most whetstones are designed to be soaked in water before every use, so check the manufacturer's instructions to be sure. (Fun fact: Whetstones aren't actually named for the fact that most are used wet—"whet" is actually just an old word for "sharpen").
The dual-sided whetstone is made from durable silicon carbide and has 400 grit on one side to sharpen the dullest blades and 1000 grit on the other side to create a nice smooth finish once the blade has been sharpened.
