The stones from Shapton are probably the hardest of all Japanese sharpening stones. They will remain flat for a long time. They are therefore the best choice if you are looking for a relatively coarse stone that cuts quickly without having to be dressed repeatedly. The finer-grained stones also work very well. But Shapton stones do not provide the mirror finish you can achieve with softer stones.
Oil stones have been around a long time, and while not as popular as in the past, they are still a practical option. Not as fast as the other stones, they are easy to use and their lower price makes them a good value for the budget conscious. With oil stones, the relation of the types and grits can be confusing. Our article, Difference in Sharpening Stone Materials, provides a more in depth explanation, but in general an India stone or two combined with an Arkansas stone is a good combination to start with.

Some of the videos I watched suggested soaking the stone for 12-15 minutes prior to use. One suggested using vegetable oil on the surface versus water/soaking (I used water and presoaking it for 15-minutes). So instead of a simple 'out-of-the-box-and-use' approach, it required a bit of research before sharpening a knife. Otherwise I would have given this product a 5-star rating.

The paring knife was moderately sharp and was modestly improved after working over all three grits of stone. It would cut paper but again it was difficult to develop a burr with this blade. Undaunted I switched to the chef's knife. This knife is twenty years old and has never been professionally re-sharpened. I have sharpened it twice with a Lanksey sharpening system which marred the finish but did put a good edge on the blade. Lansky Standard Coarse Sharpening System with Fine Hones. The chef's knife was moderately dull and had several pits visible on the cutting surface. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Not sushi knife sharp but more than enough for the chopping and slicing I expect of it. I'm looking forward to going back and working both the boning knife and the paring knife over again. Don't expect a good result from this product the first time you use it. Watch videos on using a wetstone, expect to spend at least twenty minutes per knife at first, and practice forming a burr. If you can form a burr, you will be able to successfully sharpen your knife.
The final Chef’s Choice sharpener on our list is the 316 Diamond Sharpener. Like the 15XV the 316 is at its best when used to sharpen Asian-style knives and it does so with unflinching effectiveness and speed. This is a compact, 2-stage electric sharpener that produces the 15 degree edge so favored in Asian cutlery. Ideal for the preparation of sashimi or sushi.
At this point, I can flip the stone over and use the fine course side. Most Whetstones come with a nice wooden base that do a good job to hold the stone in place while sharpening. Before starting, you might need to add a bit more water to the surface. Now with the fine course stone, finish the sharpening process like before at the same blade angle and nice consistent passes along the stone. About 10 to 12 passes is good before switching to the other side of the blade. At this point, the blade should be extremely sharp. I’ll just give a quick paper test here. I can now slice paper quite easily with my knife.
Choose the style of stone. You'll need to choose a natural or synthetic stone that can be used wet (soaked in water), with oil, or dry. There are also diamond stones that are actually very small diamonds attached to a metal surface. Stones that are soaked in water are softer stones which means you can quickly sharpen your knives. Unfortunately, these stones will wear down faster than the others. Oil stones are the least expensive and they're made of a harder material.[2]
I give Sharp Pebble a top rating for two reasons. First, the company emailed a user guide for me to review and learn how to best use its product while it was being shipped to me. Wonderfully proactive. Second, the sharpening stone did a terrific job restoring the edge on my kitchen knives that had been woefully neglected. Ever rent a house and every knife in the kitchen has the edge of a butter knife? I was almost there. Now, the knives are cutting beautifully. I have only one suggestion for Sharp Pebble. While the stone includes a useful angle guide that can be attached to a blade and the guide gives clear steps on prepping the stone and how to hold the blade when sharpening, it does not illustrate the manner in which the blade needs to be moved across the stone. I had to go to Youtube to get some tips on the exact method. I have historically been very bad at putting an edge on a blade due to ignorance primarily. But with the help of the video and a good stone, I did an effective job. The base does a great job of holding the stone in place and is attractive in the kitchen.
This wedge ends up short of a "point" to a much larger degree than the picture would indicate. The metal stops short, but then there is black non-slide "tape" applied to one side, and white "slide" tape applied to the other side, which makes the wedge even thicker than it appears in the photo, which means that in practice the end of wedge is even more truncated. So I have a hard time supporting my knives accurately on this wedge while sliding them down into contact with my stones. Prior to buying this wedge I just used a wooden wedge I cut off of a 3" by 3" post using a miter saw, said wedgewhich has a much less truncated end. That wooden wedge unfortunately absorbs water from my Japanese Waterstones. But I will try spraying polyurethane on that wooden wedge to help waterproof itand try again. If that doesn't work I will try to find a 3" by 3" plastic trim board somewhere and cut a wedge off the end of that. Note that you can buy 20 degree plastic wedges, but this is the first one I have found that does 15 degrees (nominal.) Why, then, do so many of us shy away from the task? To put it bluntly, it's because it's a rather daunting process for the beginner. Your image of knife sharpening may consist of a hyper-masculine chef slashing away violently at a steel rod (we're looking at you, Gordon). Conversely, you might have seen cooks meticulously and methodically stroking their blade up and down a Japanese waterstone with more intricate attention to detail than a Flemish landscape. 
A: For many years there was a heated debate around this topic with manufacturer’s stating flatly the notion their products actually damaged knives was absurd, and many professional chefs claiming not only was it not absurd, it was common for mechanical sharpeners to damage expensive cutlery. So who was right? To a certain extent they both were. The manufacturers were correct in asserting that if you followed the instructions to the letter there was little if any chance your knives would be damaged. However, in reality few people actually followed the instructions to the letter and when they veered from the recommended course the potential was there for damage.
Though "whetstone" is often mistaken as a reference to the water sometimes used to lubricate such stones, the term is based on the word "whet", which means to sharpen a blade,[1][2] not on the word "wet". The verb nowadays usually used to describe the process of using a sharpening stone is to sharpen, but the older term to whet is still sometimes used. The term to stone is so rare in this sense that it is no longer mentioned in for example the Oxford Living Dictionaries.[3][4] One of the most common mistaken idioms in English involves the phrase "to whet your appetite", too often mistakenly written as "to wet". But to "whet" quite appropriately means "to sharpen" one's appetite, not to douse it with water.
While it may still feel like there is a lot to choose from, you don’t need a lot of of stones, you just a several good varieties to choose from. To summarize I will indicate below what my favourite stones are in each grit. Yes you can mix up the brands when sharpening but my recommendation is to buy a combination of 2-3 stones of the same brand and go from there.
Before you start sharpening, soak the stone in water for around five to 10 minutes, until it absorbs the water and a liquid film appears on the surface. After soaking, splash some water on top, and re-splash during the process if it ever gets too dry. You'll get a dark, splotch of steel and stone building up on the stone while you're sharpening the blade. This is totally normal so just splash the stone with some water to clean it off and allow it to perform more efficiently. 

After you have completed a few passes over the stone on both sides, you can move to the final stage. This time it is P1 pressure, just enough pressure for you to control the knife. Ensure your stone is wet and now repeat the motions but with very very light pressure. You really need to focus here and ensure you are reaching the edge of the edge and again, just a few sweeps on both sides of the knife.
The composition of the stone affects the sharpness of the blade (a finer grain, usually, though not always, produces sharper blades), as does the composition of the blade (some metals take and keep an edge better than others). For example, Western kitchen knives are usually made of softer steel and take an edge angle of 20–22°, while East Asian kitchen knives are traditionally of harder steel and take an edge angle of 15–18°. The Western-style kitchen knives are generally in the range of 52–58 on the Rockwell scale, which denotes the relative hardness of a material.

In addition, the most prized of the natural Japanese Water Stones are quarried in the Narutaki District north of Kyoto, Japan and are commonly available as either bench stones or pocket stones in grits ranging from 120 to 12,000. On the other hand, synthetic water stones are made from Aluminum Oxide and commonly available as either bench stones or pocket stones as well in grits ranging from 220 to 8,000 and, although this is the same abrasive material used to make India Oil Stones, the difference between the two is that the binder that holds the abrasive together enables Water Stones to be much softer than India Oil Stones which, in turn, promotes faster cutting because the worn abrasive material breaks away more quickly and is replaced with fresh, sharp, abrasive material more quickly. In addition, because water stones do not become glazed or loaded with swarf like oil stones can, new abrasive particles are constantly exposed as the stone wears so it continues to cut consistently. Plus, they can be lubricated effectively with water (rather than oil which can ruin some water stones) which combines with the fine particles of abrasive from the surface of the stone to form a slurry which polishes the bevel as the stone cuts. However, it should also be noted that Water Stones do become uneven significantly faster than other types of whetstones although, their softness does make them easier to true again.
