If you do not remove enough metal to create a new edge, you will leave some of the dull edge in place. A dull blade (or a blade with dull spots or nicks) will reflect light from the very edge of the blade. A razor sharp knife edge will not show "bright spots" when you hold it blade up under a bright light. You will need to remove enough material from the sides of the bevel so that the edge stops reflecting light.

Practice holding the knife at a 20 degree angle. Most straight blades need to be sharpened at a 20 degree angle. To find the angle, hold the directly in front of you so it's straight up and down. This is 90 degrees. Tilt the knife halfway towards the table so it's at a 45 degree angle. Tilt the knife halfway again so it's about an inch (2.5 cm) above the table. This should be a 20 degree angle.
The type and size of the blade being sharpened determines the size of the stone needed. In general , a 6" stone is considered a small sharpening stone, an 8" stone is a common larger size, and a stone larger than 8" (10"-12" are available) is considered generously sized. Stones smaller than 6" (3" and 4" stones are quite common), are considered pocket stones and can be used for toolboxes, tackle boxes and on-the-go sharpening, but are generally not recommended for regular sharpening jobs.
In addition, there are three broad grades of Japanese Water Stones consisting of the Ara-to (rough stone), the Naka-to (middle/medium stone) and, the Shiage-to (finishing stone). However, it should be noted that the various grades of natural Japanese Water Stones vary widely in both density and grit size from stone to stone and thus, they do not translate well to American or European abrasive standards. Furthermore, because they are significantly softer than Novaculite, Japanese Water Stones must be flattened more often and do not last as long as a either Novaculite or Coticule stones. But, because they form a slurry of fine particles when used, they also do a superior job of both cutting and polishing.
Clean the knives and stone. As soon as you've finished sharpening your knives, wash and dry the blades. You should also clean the stone according to the manufacturer's instructions. For example, if you have an oil stone, you might need to scrub it occasionally with a stiff fiber brush and soak it in oil. For a water stone, wash off any of the residue and store it in a dry cloth until you need to use it again.
An important but often confusing area of sharpening is knowing when you're done with one stone and ready for the next finer grit. On coarse stones it is very easy. When you sharpen one side you will notice a burr forming on the opposite side of the edge. This burr is hard to see but is easy to feel. Very carefully feel for the burr by gently running your hand from the spine to the edge. (Do not run your finger along the knife edge from heel to tip, that's only asking for trouble!) A burr is formed when your stone removes material directly at the edge. The burr will move from one side of your knife to another as you alternate sharpening sides. Make sure you have felt the burr jump between both sides before you move on to the next finer stone. That will ensure that you have sharpened both sides effectively. The finer grits are done the same way but the burr is much smaller. On the finest grits you may not be able to notice the burr at all. Testing the knife sharpness will tell you when you're done. This 600/1,000 grit is my second Unimi knife sharpener, the first is 2,000/6,000 grit and I love them both. Both stones together produce very sharp and well polished knives that reduce the cutting effort and save time in the kitchen. I particularly appreciate that the manufacture printed the grit number on the side of each stone - that helps use the different grits in the proper sequence from the coarser to the finer. The stone comes with a non-slip silicone/rubber base which is very handy.
I enjoy these stones so much that the feedback is not a deterrent at all for me, I don’t even think about it. The results are always nothing but top notch, they deliver exactly what I want, some of the sharpest knives I have ever produced were sharpened on Shapton Glass stones. They may be thinner but they last a very long time, they are easy to maintain as well,
I would say they are worth the money. Go for it. I took a blunted Pampered Chef kitchen knife from completely dull to razor sharp in about an hour (of bumbling and repairing mistakes LOL) heavy grinding. If you have a severely damaged blade, grab one of those cheesey two sided stones from Harbor Freight to do your heavy grinding. From there these stones will work very well.
Modern synthetic stones are generally of equal quality to natural stones, and are often considered superior in sharpening performance due to consistency of particle size and control over the properties of the stones. For example, the proportional content of abrasive particles as opposed to base or "binder" materials can be controlled to make the stone cut faster or slower, as desired. Natural stones are often prized for their natural beauty as stones and their rarity, adding value as collectors' items. Furthermore, each natural stone is different, and there are rare natural stones that contain abrasive particles in grit sizes finer than are currently available in artificial stones.
It is sometimes too confusing on understanding the right sharpener that right to our tools. Then using the chart above you can consider on what is the right stone. Green, red, yellow and blue line they consist of the most familiar and affordable models of sharpening stone to purchase. You can see the performance of each stone in the chart. Silicon Carbide, Aluminum Oxide, and Arkansas they are typically used with the oil (Oil Stones). Waterstones (Synthetic Waterstones) are generally made of Aluminum Oxide too, then people also use oil in place of water with their Waterstone or use water on their Silicon Carbide sharpening stone in place of oil. In this group, Waterstones is the most preferred because of its easy for sharpening edges in shorter time.
Now you may wonder, if a finer stone produces a better cutting edge why do I need a coarse stone at all? The answer is that finer stones work much more slowly than coarse ones. The amount of metal a fine stone removes with each pass is much less than what a coarse stone removes. If you have an edge with a good shape to it from a coarse stone, this is not a problem because the fine stone doesn’t have to remove much metal to improve the edge. If the edge is dull, it will take many times longer to reshape it with a fine stone than it would with a coarse one.
