Pressure is something that is sometimes not mentioned but in my experience and in my opinion, it is extremely important to apply the correct amount of pressure, I use three different levels of sharpening pressure, with my sharpening pressure being measured on a scale from 1-5 with 1 being very light and 5 being maximum pressure. When you initiate the sharpening process, when you have all your ducks lined up and you are ready to start, use P4 (Pressure at level 4, almost maximum). in this case it is you and the stone working together, you are going to apply pressure with your finger tips (2 or 3 finger tips) placed as close to the primary edge as you can get, i.e. over the area you are working on, on the opposite side of the blade. As you push the knife away from you in a trailing motion, apply P4 pressure to the knife as it glides over the wet whetstone, (whet means sharpen) you will see the black residue start to form in the water on the surface, this is Swarf and this is good, don’t feel obliged to remove this with water, it is fine. Continue working from the heel to the tip of the knife moving your fingers along the edge and applying pressure as you move the knife away from you on the right side of the knife and as you pull it towards you on the left side, these are called edge trailing strokes.
Speaking of building muscle memory, here is a good exercise for you, a confidence builder: Paint the edge of your knife and bevel with a Sharpie and sharpen the knife at an angle that results in the removal of that Sharpie. In many cases it will be close to the 20 deg angle anyway. When you have achieved success, repeat the process and do that ten times. Now flip the blade over and do it on the other side, you don’t need to use much pressure here, just a little. You want to get to the point where you can place the knife at the SRA “Sharpie Removal Angle” the first time, every time.
Your primary goal is just to improve the edge, make it a little bit sharper. Manage you’re expectations and don’t worry about getting the knife ready for eye surgery on day one. Ignore all those YouTube videos where you see folks performing miracles with their knives, forget that completely. You just want to make the knife a little less dull and by doing so you will achieve what most people will never even attempt. You want to get a taste of sharpening success and it can happen quickly. Your immediate goal is to raise a burr on the side of knife opposite to the side you are sharpening and depending on the steel, the grit of stone and how you are doing, it will be either a very quick process or it will seem like it takes an eternity. Patience here will reward you, believe me. The sharpening process is incomplete with no burr creation on your first stone. (Yes, it is possible to stop at that magic moment without the burr forming but we are not there yet, we don’t even need to go there, ever, I am just mentioning it so those gifted sharpeners will be happy) . Think of the burr as the debris that is making the knife dull being forced down the blade towards the edge and over to the other side of the by your sharpening prowess. You form the burr, that knife will get sharp, no burr, you just need to look at your work. A Loupe is handy here, an inexpensive magnifying device with a light that allows you to see the edge very well, if you are not forming a burr, you are not reaching the edge. (Having a loupe also makes you look cool and scientific, like a Sharpologist).
Unfortunately, the arrays of modern whetstone can be bewildering to the inexperienced sharpeners that so often times many of them end up with a crap or wrong decision on stone type for their utensils. The most difficult to determine is whether the whetstone is fake or fabricated with low quality of materials. To avoid this you can only go for the reliable brand of a whetstone.
using an appropriate blade for the task – a thinner blade for more delicate work, and a thicker blade whenever a thinner blade is not required (e.g. a thinner blade might be used to cut fillets, butterfly steak or roast for stuffing, or perform Mukimono, while a thicker one might be used to slice or chop repeatedly, separate primal cuts of poultry or small game, or scrape and trim fat from meat or hide, as these actions would be more likely to cause unnecessary wear on a thinner blade.)
Grit choices should fall in line with the steel used to make the knives you plan to sharpen. If your knives are all European, relatively soft steel knives, then you could finish off your knives at the 1,000 – 2,000 grit level. There is a lengthy explanation regarding this topic but suffice it to say that at 2,000 grit, these knives can be made extremely sharp.

Cut a wine cork so that it measures .5 of an inch and use that as your visual guide. You can keep it at the end of your water stone and rest the spine of the knife on it so that you can see what that angle looks like. Now this is all pretty nifty but you still have to learn to move that knife over the water stone holding it at that angle, whether you chose 20 or 15 deg, making the template is the easy part, stabilizing that angle is where practice is crucial. You can hold the knife with that wine cork in place and that is the angle you want sharpen at but now that piece of cork has to go, you’re on your own. I have taught many many people to sharpen a knife and believe me, this particular part of the process is not as hard as many people believe! In fact as you start actually sharpening the knife you will become quite motivated to succeed because it isn’t as hard as you thought it would be. In time, you’ll learn that you don’t need or want to sharpen everything at 20 deg, but for the sake of building muscle memory it is a good place to start.
One of the combinations of stones that I was introduced to several years ago is a unique one, it is a 500, 2,000 and 16,000 grit combination. I was apprehensive when I first tried this, that was thousands of knives ago, it works, it is fantastic combination. It is unique because the traditional way of thinking is that we should be doubling the grit sizes as we sharpen, for example, a 500 grit stone should be followed by a 1,000 grit, then 2,000 grit. This line of thought is meant to be flexible, it is a general rule only, I have broken it countless times.
It helps you get the knack for a consistently correct angle BUT the idea falls apart a bit when it comes to the curve and taper part of the knife and if your knife has an excessively narrow (slicer/boner) or wide (cleaver) width. It will also mark up the sides of your knife which may bother some who are obsessed with the cosmetic appearance of their $150+ Japanese knives--I could care less.

Basically, there are 3 types of whetstones, Arato (rough grits), Nakato (medium grits) and Shiageto (fine grits). We normally use Nakato for the sharpening, but you can start with Arato to correct rough or damaged edge, and then Nakato and finish with Shiageto to get a fine and keen edge. All the sharpening methods and processes are same. However, it is not recommended to sharpen the opposite flat side of the blade with Arato
Selecting the right sharpening angle is the next step in sharpening. For more detailed instructions on selecting the right angle, try reading this article. Regardless of the method of sharpening, a appropriate angle should be selected. This angle doesn't need to be exact but following some general guidelines is a good idea. Most knife manufacturers recommend a roughly 20 degree angle. Depending on the use of your knife, you can move up or down from that angle. A fillet or slicing knife is never used on anything hard so an angle a few degrees less will produce a sharper edge. On the other hand, a survival knife with various uses can benefit from a more durable edge a few degrees larger.
The speed and polishing ability of waterstones attract many sharpeners. Waterstones sharpen quickly and are available in fine polishing grits not found in other stone types. The ability to flatten the stones is a necessity when sharpening with waterstones, so a starting set should include a flattening stone of some kind. Ceramic sharpening stones were the early replacement for natural stones. Unfortunately there are huge differences in the quality of ceramic stones so be wary. Some are extremely soft and dish out very quickly and at the other end of the spectrum some are so hard they tend to glaze over in a hurry. Ceramic stones need a good soaking for about 10 or more minutes to saturate the pores of the stone prior to use. As all knife steels are different we tend to find that ceramic stones tend to work better with some knives over others. There are no hard and fast rules but we like ceramic for Ao-ko and single edged knives. The Kaiden Ceramic stones are the fastest cutting Japanese stones in Australia and are recommended for advanced users.
However, because the Belgian Blue stone generally occurs in relatively wide columns with much thinner layers of Vielsalm Coticule on either side adjacent to the slate, the Belgian Blue stone is more plentiful that Coticule and thus, it’s somewhat less expensive. But, it’s also somewhat softer than Coticule and is not divided into different grades as Coticule is. Furthermore, because it is a softer stone than Coticule, it is sold without a substrate layer.

An important but often confusing area of sharpening is knowing when you're done with one stone and ready for the next finer grit. On coarse stones it is very easy. When you sharpen one side you will notice a burr forming on the opposite side of the edge. This burr is hard to see but is easy to feel. Very carefully feel for the burr by gently running your hand from the spine to the edge. (Do not run your finger along the knife edge from heel to tip, that's only asking for trouble!) A burr is formed when your stone removes material directly at the edge. The burr will move from one side of your knife to another as you alternate sharpening sides. Make sure you have felt the burr jump between both sides before you move on to the next finer stone. That will ensure that you have sharpened both sides effectively. The finer grits are done the same way but the burr is much smaller. On the finest grits you may not be able to notice the burr at all. Testing the knife sharpness will tell you when you're done.
