It is better to understand the difference in sharpening stone materials before you are going to make any decision. Among the available options in the market today, Waterstone, oilstone and diamond stone are the most common type of sharpening stone. Each of stones comes with advantages and disadvantages. Waterstone and oilstone are available in natural and synthetic models. Synthetic are the most common and easy to find as man makes them. As the use of natural stones (e.g. original Arkansas or Japanese natural whetstones) is has diminished in popularity, they are beginning to rare in the market. Artificial stones have a more consistent particle size and controlled with a tight mechanism in providing high-quality sharpening stone.

The basic concept of sharpening is simple – you're using an abrasive edge to remove metal – but the knife you buy may alter the method you should use. A general rule of thumb is that a waterstone can be used for both Japanese- and Western-style blades, but you should avoid pull-through sharpeners for Japanese knives (or any knife with very brittle blades).
You want sharpening stones that will be useful for the majority of your edges now, and that will remain useful as you expand both your tools and your sharpening toolkit in the future. Ending up with duplicate stones or ones that are no longer useful as you gain new knives or tools is a waste of money. The goal is to start with something that will stay with you as your needs develop.
The stone is of good quality. It can be used with water or oil - but not both at the same time of course :) ... What I really want to mention is that Hayneedle has amazing customer service - no joke! My stone was shipped from the mfg. not hayneedle whse and there was a chip on one corner. They said - we can't have that! ... So they took care of the whole matter with NO cost to me and they were very friendly as if I was doing them a favor!

An important but often confusing area of sharpening is knowing when you're done with one stone and ready for the next finer grit. On coarse stones it is very easy. When you sharpen one side you will notice a burr forming on the opposite side of the edge. This burr is hard to see but is easy to feel. Very carefully feel for the burr by gently running your hand from the spine to the edge. (Do not run your finger along the knife edge from heel to tip, that's only asking for trouble!) A burr is formed when your stone removes material directly at the edge. The burr will move from one side of your knife to another as you alternate sharpening sides. Make sure you have felt the burr jump between both sides before you move on to the next finer stone. That will ensure that you have sharpened both sides effectively. The finer grits are done the same way but the burr is much smaller. On the finest grits you may not be able to notice the burr at all. Testing the knife sharpness will tell you when you're done. Very interesting. If you work flat, 45 degree is what I was taught. Love the wet stones, especially the oiled ones. The nice thing about the leather part, is the mirror finish on a razor sharp blade which is a must if doing fine wood working, carving etc. A rough blade simply does not have the fine detailed dexterity. I find that the oiled sandpaper can work great as well, but found that the refined clay bars (white refined fired clay rounds and flats etc) does a wonderful job of keeping those razor edges refined, smooth as possible and then one can high polish them for smooth cutting. Believe me, when working wood for a flute, one wants that refined edge.! Learning how to hone a blade on a flat surface teaches one to work outside without a table/wall handy too...:) But we all have to start somewhere!:) Anyway, great stuff and a great start for those who want more from their tools!:) Cheers!


Your stroke can be straight or circular, from "hilt to tip" OR "tip to hilt," whichever is more comfortable. If you're using a small portable sharpener, stroke the blade in nearly a straight direction. Remember to always cut into the stone and never pull or drag your edge backwards. The blade edge should face in the same direction as your stroke. So, you're essentially moving the metal away from the edge. We recommend the circular stroke as it helps you maintain your angle instead of having to find it every time you lift the knife from the stone.

Selecting the right sharpening angle is the next step in sharpening. For more detailed instructions on selecting the right angle, try reading this article. Regardless of the method of sharpening, a appropriate angle should be selected. This angle doesn't need to be exact but following some general guidelines is a good idea. Most knife manufacturers recommend a roughly 20 degree angle. Depending on the use of your knife, you can move up or down from that angle. A fillet or slicing knife is never used on anything hard so an angle a few degrees less will produce a sharper edge. On the other hand, a survival knife with various uses can benefit from a more durable edge a few degrees larger.

Be careful: Don’t move your fingers laterally along the edge, you’ll cut yourself. Feel for a rough area running from tip to heel. Again, it takes time to know what to expect because the best burr will be subtle. Just know that the bigger the burr, the more metal you are removing—more than necessary. Don’t worry, you won’t ruin the knife doing this. You’re learning here, and mistakes are part of the sharpening journey. Learn from them.


Over the course of two days I re-sharpened nearly a dozen old blades, including removing the secondary bevel on an old stainless Ontario saber-grind Navy diver's knife, convexing the edge on flat ground 1095 Schrade 55 that also came with a secondary bevel, and fixing a broken tip on an old Kershaw folder. These stones made quick work of the Schrade and Kershaw. Both had completely new edge geometry within 30 minutes apiece. The Kershaw looked like-new, as if the tip had never broken. And the Schrade cut much better than it's secondary bevel would previously allow, regardless of how sharp I got it with a ceramic rod and strops. The Ontario took a little more work, as it had been abused a little the last time I'd held it, over 25 years ago and was as dull as a case knife - one of the reasons I decided to go ahead and do a full saber grind - well, a slightly convexed saber, I suppose would be more accurate. But within under an hour of using the two stones and a couple leather strops (one with black compound, another with green), the Ontario was shaving sharp again too.

A diamond plate is a steel plate, sometimes mounted on a plastic or resin base, coated with diamond grit, an abrasive that will grind metal. When they are mounted they are sometimes known as diamond stones.[12] The plate may have a series of holes cut in it that capture the swarf cast off as grinding takes place, and cuts costs by reducing the amount of abrasive surface area on each plate. Diamond plates can serve many purposes including sharpening steel tools, and for maintaining the flatness of man-made waterstones, which can become grooved or hollowed in use. Truing (flattening a stone whose shape has been changed as it wears away) is widely considered essential to the sharpening process but some hand sharpening techniques utilise the high points of a non-true stone. As the only part of a diamond plate to wear away is a very thin coating of grit and adhesive, and in a good diamond plate this wear is minimal due to diamond's hardness, a diamond plate retains its flatness. Rubbing the diamond plate on a whetstone to true (flatten) the whetstone is a modern alternative to more traditional truing methods.[13]
The coarse stone will cut the metal off quicker but it is going to give you a rougher edge but that way the job gets done quicker, without the oil. It is not as messy. This is just a real simple set up. If you do wood work you can make a little wooden box and rout it out. In this particular case it is just a 2x4, stone traced out, finishing nails tapped down so they are deeper than the stone so when you drop the stone in, if you are at a workbench you can C-clamp it down in place or you can hold on to it.
This 600/1,000 grit is my second Unimi knife sharpener, the first is 2,000/6,000 grit and I love them both. Both stones together produce very sharp and well polished knives that reduce the cutting effort and save time in the kitchen. I particularly appreciate that the manufacture printed the grit number on the side of each stone - that helps use the different grits in the proper sequence from the coarser to the finer. The stone comes with a non-slip silicone/rubber base which is very handy.
