Over the course of two days I re-sharpened nearly a dozen old blades, including removing the secondary bevel on an old stainless Ontario saber-grind Navy diver's knife, convexing the edge on flat ground 1095 Schrade 55 that also came with a secondary bevel, and fixing a broken tip on an old Kershaw folder. These stones made quick work of the Schrade and Kershaw. Both had completely new edge geometry within 30 minutes apiece. The Kershaw looked like-new, as if the tip had never broken. And the Schrade cut much better than it's secondary bevel would previously allow, regardless of how sharp I got it with a ceramic rod and strops. The Ontario took a little more work, as it had been abused a little the last time I'd held it, over 25 years ago and was as dull as a case knife - one of the reasons I decided to go ahead and do a full saber grind - well, a slightly convexed saber, I suppose would be more accurate. But within under an hour of using the two stones and a couple leather strops (one with black compound, another with green), the Ontario was shaving sharp again too.
The whetstone is the most popular for sharpening pocket knives (or knives). But, before  you go into the sharpening, you must prepare the whetstone beforehand.  Don't worry, it's quite easy. The majority used can be done by dipping the stone in water for about 15 minutes. Regardless of what type of whetstone you use, never use it while it's dry. It's important for a clean sharpening. Using mineral oil is another way to prepare a whetstone. It'll absorb into it once you begin putting the right amount on the surface. How you will determine how much to put is to ensure a "thick film" is lathered across the entire surface. This is critical when you learn how to sharpen a pocket knife.
In most cases, the sharper, the better. The sharpness of your edge is determined by the angle (the lower the angle, the sharper the edge) and how fine of a grit you choose for your final honing. Since you have already determined your angle many steps earlier, now you just need to know which grit you can stop at. This again depends on the use of the knife. In most cases, go all the way to the finest stone that you own as this will give you your best edge. The only exception would be a knife used to cut soft vegetables like tomatoes, as a slightly more coarse edge will provide more of a tooth pattern for easier cutting. 

I do have to question the grit ratings of these stones. I didn't notice anything before using them, but after a day, the 2000 grit actually felt courser than the 1000 grit side of the other stone. Whether that could be a byproduct of other factors or an indication of the more obvious, being that the grit ratings aren't accurate, I don't know. But that seemed to be the main criticism of cheaper whetstones, that their grit ratings often aren't accurate. Or maybe it's less a problem with accuracy and more a difference that most synthetic stones might have in common when being compared to much pricier natural stones?

There is no dominant standard for the relationship between "grit size" and particle diameter. Part of the difficulty is that "grit size" is used to refer to the smoothness of the finish produced by a sharpening stone, and not just the actual size of the grit particles. Other factors apart from particle diameter that affect the finish (and thus the "grit size" rating) are:
While it may still feel like there is a lot to choose from, you don’t need a lot of of stones, you just a several good varieties to choose from. To summarize I will indicate below what my favourite stones are in each grit. Yes you can mix up the brands when sharpening but my recommendation is to buy a combination of 2-3 stones of the same brand and go from there.
"How do I use this daunting metal rod?" I hear you ask. Well, it's not too hard, really. The best way for a beginner is to balance the steel on a surface with the tip secured by a damp tea towel. You want to get that angle right, whether it's around 15 degrees for a Japanese knife or 20 degrees on a German or French blade. Then swipe slowly down, away from you, making sure the whole blade is honed – around five swipes on each side should do. 
As you continue to repeat strokes on the first time, eventually a tiny burr will form on the other side of the blade. To check for it, place the blade on your thumb, and pull it backwards. If the burr has formed, it should catch slightly on your thumb (with really fine grit stones, say 2000 or above, you won't feel this). This may take up to 30 or 40 strokes, and is the indication that you should switch and start sharpening the other side.
I've only used it to touch up the edge on an ESEE RB3 and a pocket folder so far, but it has done very nicely for those tasks. I found that using the rounded edge works best for me in order to be able to run the length of the blade without hitting the leather lanyard. I'll hopefully try it out soon on fish hooks, too. A worthy and handy accessory, and cool looking necklace, to boot!

This wedge ends up short of a "point" to a much larger degree than the picture would indicate. The metal stops short, but then there is black non-slide "tape" applied to one side, and white "slide" tape applied to the other side, which makes the wedge even thicker than it appears in the photo, which means that in practice the end of wedge is even more truncated. So I have a hard time supporting my knives accurately on this wedge while sliding them down into contact with my stones. Prior to buying this wedge I just used a wooden wedge I cut off of a 3" by 3" post using a miter saw, said wedgewhich has a much less truncated end. That wooden wedge unfortunately absorbs water from my Japanese Waterstones. But I will try spraying polyurethane on that wooden wedge to help waterproof itand try again. If that doesn't work I will try to find a 3" by 3" plastic trim board somewhere and cut a wedge off the end of that. Note that you can buy 20 degree plastic wedges, but this is the first one I have found that does 15 degrees (nominal.) Steeling helps maintain sharpness. This process realigns the edge, correcting for dulling causes such as a rolled edge. A sharpening steel is a type of hardened cylindrical rod used similarly to honing stones. For example, a butcher steel is a round file with the teeth running the long way, while a packer steel (used in the meat packer's industry) is a smooth, polished steel rod designed for straightening the turned edge of a knife,[7] and is also useful for burnishing a newly finished edge. Because steels have a small diameter they exert high local pressure, and therefore affect the knife metal when used with very little force. They are intended for mild steel knives that are steeled several times a day, but are not well suited for today's tougher and harder blade steels. Diamond steels are now available that have an industrial diamond coating and can remove blade metal as well as straighten, therefore used correctly they can re-profile a knife instead of just honing.
Choose the style of stone. You'll need to choose a natural or synthetic stone that can be used wet (soaked in water), with oil, or dry. There are also diamond stones that are actually very small diamonds attached to a metal surface. Stones that are soaked in water are softer stones which means you can quickly sharpen your knives. Unfortunately, these stones will wear down faster than the others. Oil stones are the least expensive and they're made of a harder material.[2]
Honing is kind of like dusting the furniture while sharpening is more like reupholstering the furniture. Honing is purely a maintenance activity that should be regularly practiced to make sure the blade is clean and sharp as can be every time you use it. It’s easily done using a honing rod, a leather strop or a sharpening stone; as most stones have a side for sharpening and a side for honing. Honing is akin to trimming your hair to remove the split ends. It’s not a full on haircut. What it does is realign the tiny sharp protrusions along the edge of the blade that can be bent over with use, so that they stand more or less straight.

After you have completed a few passes over the stone on both sides, you can move to the final stage. This time it is P1 pressure, just enough pressure for you to control the knife. Ensure your stone is wet and now repeat the motions but with very very light pressure. You really need to focus here and ensure you are reaching the edge of the edge and again, just a few sweeps on both sides of the knife. 

The Sharpening and Specialty lines of waterstones from Naniwa are available in several packages of three to five stones. The Specialty line is the same as the Sharpening line, but half the thickness and therefore less expensive. Both the Sharpening and the Specialty stones are 8 1/4" long by 2 3/4" wide, amply sized for most knives and tools. These are a higher grade stone that do not require soaking before use. While you would need a flattening stone in addition, these kits are a good way to enter into premium grade waterstones.
I've been using this stone for months and have started to find that, while the fine side does provide a nice sharp edge, the 400gr side is wearing my knives unevenly, which causes me to be unable to finely sharpen the entire length of the blade when moving to the fine side. The logo that is put in the middle of the 400gr side of the knife is causing more material to be removed than the rest of the blade when I'm sweeping across. I even verified this by going straight down the length of the fine side and watching the wear pattern come from the material coming off of the knife onto the stone.
The Whetstone 2-Sided Sharpening Stone is made from professional grade corundum and will sharpen everything from a razor blade to a cleaver and even a machete, should you happen to have a machete lying about that needs sharpening. This is the simplest type of sharpener it’s true but the company have obviously put a great deal of thought into the product.

The type of stone refers to the material it is made with. You can find many different types, including diamond, ceramic, natural stone, and synthetic. I would only suggest diamond if you’re planning to be sharpening only ceramic knives. Many of the stones you’ll find on Amazon or other retails are made of Corundum, which is a crystalline form of aluminium oxide. It’s a fine choice for a beginner sharpening stone.

The height of the spine of your knife off of the stone below it will determine the angle. A typical sharpening angle for a typical chef knife is 19 or 20 degrees per side. For the sake of removing confusing obstacles that could hinder your progress, let’s just sharpen your knife at 20 degrees per side. You can determine exactly how high off the stone that knife should be held by measuring the height of your blade at the heel and then dividing that number by 3 for a 20 deg angle.
The thumbnail test (not recommended for novices) - With this test you take your newly sharpened blade and run it oh-so-delicately over your thumbnail. If you feel it digging in even a tiny bit, it’s likely sharp enough. If on the other hand it just slips and slides across the surface of your nail it’s not sharp yet. Again, this test is only recommended for people with lots of experience handling knives and even then they’d probably be better off just grabbing a tomato or a piece of paper.

The type and size of the blade being sharpened determines the size of the stone needed. In general , a 6" stone is considered a small sharpening stone, an 8" stone is a common larger size, and a stone larger than 8" (10"-12" are available) is considered generously sized. Stones smaller than 6" (3" and 4" stones are quite common), are considered pocket stones and can be used for toolboxes, tackle boxes and on-the-go sharpening, but are generally not recommended for regular sharpening jobs.

Next we sharpen the opposite side of the blade. Just as you did before, sharpen the knife keeping an angle of 10' to 15'. Push the point you want to sharpen with your first, second and third fingers. While keeping the angle and pushing the point with your fingers, stroke the blade until it reaches the other edge of the whetstone. Then pull the blade back until it reaches the edge of the whetstone. This back and forth is counted as one stroke. Repeat it for about five strokes until you can see or feel some small burrs (edge curvatures).. Then move the position of your fingers to where you have not sharpened yet, and repeat this five strokes of sharpening processed from the tip to the base of the blade. When your whetstone becomes dry, occational watering during  sharpening process will also help and improve smooth sharpening.

Actually, the company contacted me to make sure I received the stones and that I was happy with them. Excellent service. The stones are great! I'm pretty much a novice so the clear instructions that came with the stones and the eBook instructions were wonderful. The eBook had quality pictures demonstrating the use of the stones and the written instructions were clear and to the point. Within minutes of opening the box I had the stones figured out and sharpening my AF survival knife, my pocket knife and a couple of my wife's kitchen knives...which included a very expensive chef's knife. The DuoSharp Plus stones are nicely sized at 8” long by 2 5/8” wide and have two grits on each stone to maximize value. The Plus in the name refers to an area of continuous grit in the otherwise interrupted grit surface of the stone. This area is for sharpening edges with fine points that might be difficult on the interrupted surface. A coarse/fine DuoSharp Plus stone is a good single stone to start a sharpening toolkit.


With its premium series Select II, the whetstone manufacturer Sigma Power Corporation from Tokyo addresses users of high-alloy steels such as HSS. These stones, too, are obviously intended to engender a grinding experience similar to that of natural stones. The special production process is expensive, but the Sigma Select II probably has no equal when it comes to demolishing steel.
There will be a drawer that extends into the mechanism under the abrasives. Any detritus from the sharpening process drops into this drawer. Exactly where the drawer is located will differ from sharpener to sharpener but it shouldn’t be hard to find. Remove the drawer flick any material into the wastebasket and then wipe out the drawer with a damp cloth or tissue. You may want to use work gloves and goggles to protect your hands and eyes from any loose metal shavings. Once the drawer is clean and dry replace it. The exact means by which the sharpening mechanism itself is cleaned will vary from manufacturer to manufacturer. Consult your owners guide for specific details. Make sure you don’t introduce any grease or other lubricants into the sharpener unless specifically directed to do so by the owner’s manual. Also, the outside of the sharpener should come perfectly clean with just a damp cloth. Avoid using commercial cleaners or abrasives of any kind.
Unfortunately, the arrays of modern whetstone can be bewildering to the inexperienced sharpeners that so often times many of them end up with a crap or wrong decision on stone type for their utensils. The most difficult to determine is whether the whetstone is fake or fabricated with low quality of materials. To avoid this you can only go for the reliable brand of a whetstone.
A great sharpener for all your kitchen knives the CS2 also makes a smart addition to the gear when you’re going away on a family camping trip. It will also do a bang-up job on your hunting, pocket, boning knife and more. As mentioned it does require just a bit of getting used to in order to achieve optimal results but nothing too involved. A simple, effective, no-frills sharpener.

Your immediate goal is to raise a burr on the side of knife opposite to the side you are sharpening and depending on the steel, the grit of stone and how you are doing, it will be either a very quick process or it will seem like it takes an eternity. Patience here will reward you, believe me. The sharpening process is incomplete with no burr creation on your first stone. (Yes, it is possible to stop at that magic moment without the burr forming but we are not there yet, we don’t even need to go there, ever, I am just mentioning it so those gifted sharpeners will be happy) . Think of the burr as the debris that is making the knife dull being forced down the blade towards the edge and over to the other side of the by your sharpening prowess. You form the burr, that knife will get sharp, no burr, you just need to look at your work. A Loupe is handy here, an inexpensive magnifying device with a light that allows you to see the edge very well, if you are not forming a burr, you are not reaching the edge. (Having a loupe also makes you look cool and scientific, like a Sharpologist).
Besides of the quality, of course, there are other things to consider when shopping a proper whetstone that would meet our needs that are relating to the type, size of the stone, and the stone grit grade. Nevertheless, it is impossible to recommend which model or type is best for every sharpener because everyone comes with different needs and requirements. The only need-to-know by beginning sharpeners are the basic things that will help them to narrow down their consideration. Again, burr formation is critical to success and if you are using a 1,000 grit stone on a dull knife, you may be there for a while but it will form. If you are grinding on one side for more than 3-4 minutes, flip the knife and work the opposite side, always feeling for a burr with your thumb on the opposite side to which you are working on. Remember, the fatigued metal is being forced down the blade towards the edge of the edge by your actions and the abrasive properties of the stone.
Don't know. Not sure that I really care, as these stones definitely did the job that was asked of them, and did it with ease, even for a beginner whetstone user. I'll probably stick with them, at least until I get a lot more experience. Though, I do see a 10,000 or higher grit stone in my immediate future - more to play around with, than a feeling of genuine need.
