Best purchase I every made. while my knife doesnt cut a fine layer of tomato without touching it, it became as good as it was when I purchased. I recommend users to learn how to properly sharpen the knife. It took me about 30 minutes to sharpen a single knife to what it is today. The knife gets really sharp. Also, with use, the surface gets uneven. I recommend you draw a grid in pencil and then file using the grinder stone until the grids disappear. This ensures the surface remains flat during all use.
Aluminum-Oxide oil stones are very popular man-made sharpening stones produced by an abrasives company called Norton and which are commonly called India Stones. Generally less expensive than Arkansas stones (aka Novaculite), these stones are graded coarse, medium, and fine and are designed for fast cutting. Yet, when the fine grit is used, they can also produce a relatively fine edge. Also, because India Oil Stones are both softer and coarser than Arkansas Stones, they are commonly used in conjunction with Novaculite to cut the initial edge bevels or, repair extremely dull or damaged edges before refining and polishing the bevel with an Arkansas Stone.

Obviously, you’ll need a whetstone (as well as a few other things), and you’ll want to work near your sink or a bucket so you have easy access to water. Fill a container with water, then soak the whetstone in it until it stops bubbling. One of the combinations of stones that I was introduced to several years ago is a unique one, it is a 500, 2,000 and 16,000 grit combination. I was apprehensive when I first tried this, that was thousands of knives ago, it works, it is fantastic combination. It is unique because the traditional way of thinking is that we should be doubling the grit sizes as we sharpen, for example, a 500 grit stone should be followed by a 1,000 grit, then 2,000 grit. This line of thought is meant to be flexible, it is a general rule only, I have broken it countless times.
The paper test - Remove your knife from the sharpener. Grab a piece of notebook paper and hold it vertically in your hand so that one edge is facing straight up. Now take the knife and push it down against this edge. If the blade cuts through without hesitation it’s sharp. If the paper simply crumples beneath the blade instead of cutting the blade needs a bit more work.
Practice holding the knife at a 20 degree angle. Most straight blades need to be sharpened at a 20 degree angle. To find the angle, hold the directly in front of you so it's straight up and down. This is 90 degrees. Tilt the knife halfway towards the table so it's at a 45 degree angle. Tilt the knife halfway again so it's about an inch (2.5 cm) above the table. This should be a 20 degree angle.
There will be a drawer that extends into the mechanism under the abrasives. Any detritus from the sharpening process drops into this drawer. Exactly where the drawer is located will differ from sharpener to sharpener but it shouldn’t be hard to find. Remove the drawer flick any material into the wastebasket and then wipe out the drawer with a damp cloth or tissue. You may want to use work gloves and goggles to protect your hands and eyes from any loose metal shavings. Once the drawer is clean and dry replace it. The exact means by which the sharpening mechanism itself is cleaned will vary from manufacturer to manufacturer. Consult your owners guide for specific details. Make sure you don’t introduce any grease or other lubricants into the sharpener unless specifically directed to do so by the owner’s manual. Also, the outside of the sharpener should come perfectly clean with just a damp cloth. Avoid using commercial cleaners or abrasives of any kind.
When you apply a sharp knife to the surface of a tomato, cucumber, carrot or other food item it should - if you are holding it firmly and applying minimal pressure - sink into the particular item without effort. As such all you really need to work on is your technique and making sure you keep your fingers out of the way. With a dull knife however things aren’t quite so simple. When you apply a dull blade to, say, a tomato it’s not going to slice into the skin. Instead the skin will be able to push back meaning you’ll need to apply ever more pressure to get the knife to penetrate. Increasing the pressure on the knife increases the likelihood of the knife slipping off the offending food item to one side or another. And if it slips to the side where your hand is attempting to hold the vegetable steady you could be in store for a very nasty cut. Because even a dull knife will cause injury if there’s enough force behind it.
There is no dominant standard for the relationship between "grit size" and particle diameter. Part of the difficulty is that "grit size" is used to refer to the smoothness of the finish produced by a sharpening stone, and not just the actual size of the grit particles. Other factors apart from particle diameter that affect the finish (and thus the "grit size" rating) are:
The whetstone is the most popular for sharpening pocket knives (or knives). But, before you go into the sharpening, you must prepare the whetstone beforehand. Don't worry, it's quite easy. The majority used can be done by dipping the stone in water for about 15 minutes. Regardless of what type of whetstone you use, never use it while it's dry. It's important for a clean sharpening. Using mineral oil is another way to prepare a whetstone. It'll absorb into it once you begin putting the right amount on the surface. How you will determine how much to put is to ensure a "thick film" is lathered across the entire surface. This is critical when you learn how to sharpen a pocket knife.
The coarse stone will cut the metal off quicker but it is going to give you a rougher edge but that way the job gets done quicker, without the oil. It is not as messy. This is just a real simple set up. If you do wood work you can make a little wooden box and rout it out. In this particular case it is just a 2x4, stone traced out, finishing nails tapped down so they are deeper than the stone so when you drop the stone in, if you are at a workbench you can C-clamp it down in place or you can hold on to it.
When the block is intended for installation on a bench it is called a bench stone. Small, portable stones (commonly made of bonded abrasive) are called pocket stones. Being smaller, they are more portable than bench stones but present difficulty in maintaining a consistent angle and pressure when drawing the stone along larger blades. However, they still can form a good edge. Frequently, fine grained pocket stones are used for honing, especially "in the field". Despite being a homophone with wet in most dialects of modern English, whetstones do not need to be lubricated with oil or water, although it is very common to do so. Lubrication aids the cutting action and carries swarf away.
I am just starting out sharpening with whet stones. I have found these stones to be very nice and the instructional videos that come along with the set on knifeplanet are extremely helpful to anyone starting out.
