Sharpening stones have been around since the dawn of civilization for a very good reason: they work. Yes, they’re more labor intensive than most electric sharpeners but they also allow you an unprecedented level of control. Once you get used to something like the Fallkniven DC3 Diamond/Ceramic Whetstone Sharpener you may never take out your electric sharpener again.
It will be tempting to raise the angle here to get to the edge quickly, that is not the way to go. Re-paint the edge/bevel if necessary and try again. You can flip the knife prior to burr formation and work on the opposite side. Repeatedly feel for the burr with your thumb by running it very gently down the blade and over the edge, if the burr is there it will be very obvious, you need to create the burr along the entire length of the blade. Once you have done that, (you have accomplished what most people will never try) but besides that, you have to do the same to the other side of the blade.

Where you've determined where the bevel angle is located, then this is what you will position against the stone. It's a good idea to know the differences between various angles for certain blade uses. There's a certain height of the blade that it should be from the stone. You'll be able to find various charts on height of the blade online. Normally, for a pocket knife or kitchen knife, it'll be 17° - 22° angle against the stone. The "Rule of thumb" is the smaller the angle, the sharper the knife. Most makers will have it in the instruction or on their official website. 

The speed and polishing ability of waterstones attract many sharpeners. Waterstones sharpen quickly and are available in fine polishing grits not found in other stone types. The ability to flatten the stones is a necessity when sharpening with waterstones, so a starting set should include a flattening stone of some kind. The type of stone refers to the material it is made with. You can find many different types, including diamond, ceramic, natural stone, and synthetic. I would only suggest diamond if you’re planning to be sharpening only ceramic knives. Many of the stones you’ll find on Amazon or other retails are made of Corundum, which is a crystalline form of aluminium oxide. It’s a fine choice for a beginner sharpening stone.

The smaller the angle between the blade and stone, the sharper the knife will be, but the less side force is needed to bend the edge over or chip it off. The angle between the blade and the stone is the edge angle – the angle from the vertical to one of the knife edges, and equals the angle at which the blade is held. The total angle from one side to the other is called the included angle – on a symmetric double-ground edge (a wedge shape), the angle from one edge to the other is thus twice the edge angle. Typical edge angles are about 20° (making the included angle 40° on a double-ground edge).[1] The edge angle for very sharp knives can be as little as 10 degrees (for a 20° included angle). Knives that require a tough edge (such as those that chop) may sharpen at 25° or more.
A shinkansen is a Japanese-style pull-through sharpener named after the famous bullet train. It features two sets of ceramic wheels set at the right angle for sharpening a Japanese blade, which takes out the guesswork of the waterstone. Simply hold the handle with your left hand, then saw back and forth gently through the coarser wheel to sharpen, before switching to the finer wheel to polish.
As you see in the pictures, it is always very important to keep same angle of about 10' to 15', which is about two coins height between the blade and the whetstone. Gently push the point you want to sharpen with your first, second and third fingers. While keeping the angle and pushing the point with your fingers, stroke the blade until it reaches the other edge of the whetstone. Then pull the blade back until it reaches the edge of the whetstone. This back and forth is counted as one stroke. Repeat it for about five strokes until you can see or feel some small burrs (edge curvatures). Then move the position of your fingers to where you have not sharpened yet, and repeat this five strokes of sharpening processed from the tip to the base of the blade.

Although there are many ways to sharpen your kitchen knives, we believe that using a sharpening stone is the absolute best way to go about it. Not only will you get the best results, you won’t assume as much risk of damaging the blade as you would using a manual or electric knife sharpener. The problem for most home cooks, however, is finding the best sharpening stone and learning how to use it. I’m not going to pretend it’s as easy as purchasing a stone and digging right in.
You’ll know you’re reached a stopping point when you can feel the slight catch of the bevel on the edge of the blade, by carefully running your finger in the direction of the blade, or by cutting through a sheet of paper. Sharpening on the other hand is reupholstering the furniture or telling the hair stylist to give you a new look. Material is going to be removed from the edge of the blade. There’s no way around it. How much is removed will be a function of just how dull the knife has become or whether you’re sharpening to compensate for a chip in the edge or because the tip has broken off. If your knife is not damaged and you have it sharpened twice a year very little material will be removed each time, yet it may still be enough for you to notice just by looking carefully with the naked eye.

I was able to touch up my bark River gunny sidekick with it( m4 steel at 62-64 hrc!), And that is saying something. Again, burr formation is critical to success and if you are using a 1,000 grit stone on a dull knife, you may be there for a while but it will form. If you are grinding on one side for more than 3-4 minutes, flip the knife and work the opposite side, always feeling for a burr with your thumb on the opposite side to which you are working on. Remember, the fatigued metal is being forced down the blade towards the edge of the edge by your actions and the abrasive properties of the stone.
Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.
Select the grit of the stone. Sharpening stones are available with different grit sizes. For example, you can choose fine, medium and coarse stones. You should use a coarse stone followed by a fine grit if your knives are dull. If your knives have been sharpened recently or they aren't too dull, consider using a medium grit. Try to use a grit level ranging from 325 (for coarse) to 1200 (for extra fine).[3]

The height of the spine of your knife off of the stone below it will determine the angle. A typical sharpening angle for a typical chef knife is 19 or 20 degrees per side. For the sake of removing confusing obstacles that could hinder your progress, let’s just sharpen your knife at 20 degrees per side. You can determine exactly how high off the stone that knife should be held by measuring the height of your blade at the heel and then dividing that number by 3 for a 20 deg angle.

However, due to limited natural deposits and extensive quarrying over the centuries, true, high quality, Japanese water stones are now few and far between and are very expensive. Thus, various companies are now producing synthetic Japanese Water Stones which generally have a more consistent composition and grit size than natural stones as well as often begin somewhat harder and thus, lasting a bit longer; not to mention being cheaper to purchase. 

Today, however, there is a whole new generation of mechanical sharpeners that are far more forgiving for those who may not use perfect technique. At the same time many more people have become accustomed to sharpening their knives this way and the average novice of 10 years ago is now the seasoned pro. It is still possible to damage knives with an electric sharpener, but you would have to either be trying to damage the knife or have some type of accident in order to do so.

Now you may wonder, if a finer stone produces a better cutting edge why do I need a coarse stone at all? The answer is that finer stones work much more slowly than coarse ones. The amount of metal a fine stone removes with each pass is much less than what a coarse stone removes. If you have an edge with a good shape to it from a coarse stone, this is not a problem because the fine stone doesn’t have to remove much metal to improve the edge. If the edge is dull, it will take many times longer to reshape it with a fine stone than it would with a coarse one.
