if you have regular kitchen knives it will not work- first its to deep and the blade does not stick out, not dinner knives but cooking knives. of all the knives i put in it only 1 was wide enough to stick out. the device does not hold the blades. all the blades tested fell out of it, even a hunting knife, maybe its for 1 type of knife and they are selling it as the must have tool for all.. that said sell something useless for a few bucks that most cant use, they got a few bucks that most will blow off and not worry about a refund.. DONT WASTE YOUR MONEY.
While it may still feel like there is a lot to choose from, you don’t need a lot of of stones, you just a several good varieties to choose from. To summarize I will indicate below what my favourite stones are in each grit. Yes you can mix up the brands when sharpening but my recommendation is to buy a combination of 2-3 stones of the same brand and go from there.

I am just starting out sharpening with whet stones. I have found these stones to be very nice and the instructional videos that come along with the set on knifeplanet are extremely helpful to anyone starting out. The cost of the set was very reasonable and seems to be a great value. The customer service is amazing, I lost the site for the videos and sent an email to get the information and immediately there was a reply with all of the links that I needed. The kind of tech we love: compact, reliable, durable, attractive and cheap. Purists may feel that other sharpeners will produce a more perfect result but for 99% of the human race this sharpener will be everything the doctor ordered. Your blades stay sharp for a good long time thanks to the 2-stage sharpening process and if you’re a left handed chef you’ll love the fact that it works just as effectively for you as for anyone else.
A: That depends almost entirely on how often you use them. If you are a professional chef who uses his or her knives every day then you should hone them every time you use your knives. But honing has its limits and over time your edge is going to become dull no matter what. Therefore your knives will need to be sharpened at least several times a year. Some chefs, in fact, will use a whetstone on an almost daily basis in order to ensure their knives are always razor sharp. Most of us, however, are not professional chefs and may not even touch our kitchen knives for days at a time. In that case, it’s probably a good idea to hone the edge after every couple of uses and have your knives sharpened once a year.
Now you may wonder, if a finer stone produces a better cutting edge why do I need a coarse stone at all? The answer is that finer stones work much more slowly than coarse ones. The amount of metal a fine stone removes with each pass is much less than what a coarse stone removes. If you have an edge with a good shape to it from a coarse stone, this is not a problem because the fine stone doesn’t have to remove much metal to improve the edge. If the edge is dull, it will take many times longer to reshape it with a fine stone than it would with a coarse one.
