A: People often make the mistake of assuming that just because a mechanical knife sharpener will sharpen the edge of a knife that means it will sharpen any type of cutting edge, including scissors. This is a mistake and can wind up being a costly mistake when you have to replace both your scissors and the knife sharpener. There are sharpening devices specifically designed to handle scissors. Or you can bring your scissors to a sharpening pro who will usually have the right equipment on hand to also sharpen scissors. Another thing to keep in mind about trying to use a sharpener to sharpen scissors is that by using the device in this fashion you are likely voiding the warranty. As such if you damage the device trying to sharpen scissors you’ll need to pay to have it repaired or replaced as the warranty won’t cover it. Also, certain types of high end scissors also come with a warranty. It is better to understand the difference in sharpening stone materials before you are going to make any decision. Among the available options in the market today, Waterstone, oilstone and diamond stone are the most common type of sharpening stone. Each of stones comes with advantages and disadvantages. Know your stones: Whetstones are made with a range of materials, from ceramics to synthetics, or a cement-like conglomerate of finely ground stone. All whetstones are categorized according to grit, or coarseness. Rough stones have a lower grit count and are the first step in sharpening a particularly dull or chipped blade. Medium whetstones hover in the 800- to 2,000-grit range and are most often the first step in sharpening a knife. Whetstones with a grit count of 3,000 or above are referred to as finishing stones, and are used for refining and polishing.

Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.

People often describe the Trizor XV as putting a 15-degree edge on a blade, but the reality is a bit more complex. Very interesting. If you work flat, 45 degree is what I was taught. Love the wet stones, especially the oiled ones. The nice thing about the leather part, is the mirror finish on a razor sharp blade which is a must if doing fine wood working, carving etc. A rough blade simply does not have the fine detailed dexterity. I find that the oiled sandpaper can work great as well, but found that the refined clay bars (white refined fired clay rounds and flats etc) does a wonderful job of keeping those razor edges refined, smooth as possible and then one can high polish them for smooth cutting. Believe me, when working wood for a flute, one wants that refined edge.! Learning how to hone a blade on a flat surface teaches one to work outside without a table/wall handy too...:) But we all have to start somewhere!:) Anyway, great stuff and a great start for those who want more from their tools!:) Cheers!

My Fujiwara is an exceptional cutter and a pure joy to use, as a result, the mediocre knives get a pretty good break and the dream knife gets to do the lions share of food preparation. So it gets duller faster. However, it goes without saying that superior steel will have improved edge retention but at the end of the day, knives get dull, they just do and I am very happy about that, I get to sharpen them over and over!
I have been looking for water stones for a while and was pleased to find the two sided set from Budo Enterprises. I ordered the set and it arrived in two days as promised. I immediately put it to the test and the results were excellent. In the past I had separate 800 and 2000 grit stones, and having the 1000 and 4000 grit stones together is much more efficient. It was a good purchase.
we have a chefs model electric, 3 stone set was supposed to be able to sharpen serrated. Never could do that. But at first the unit was able to get a real good edge on a variety of non serrated edges….then it turned to crap and actually ruined 2 knives that cost more then the unit each….it didnt last long enough . would of been less expensive to pay some one to sharpen the knives it actually did sharpen

These are unquestionably great starter stones. After all the sharpening done over the course of a couple days, they're still perfectly flat, showing little to no signs of wearing down. Mind you I did watch tons of how-to videos online before undergoing the endeavor, so I knew how to try to make the stone wear evenly. But, my 15 year old nephew who was working on the Ontario, as I told him he could have it, if he wanted to fix it up, didn't watch all those videos and I didn't see any uneven wear on his stone after working it about a half hour either.

However, it should also be noted that “water stones” are generally significantly softer than oil stones and thus, water stones generally cut faster than oil stones but, they also have to be flattened more often that oil stones do. Furthermore, it should be noted that some water stones must be soaked in water for several hours prior to use whereas, others are of the “splash and sharpen” variety and thus, they only need to be soaked for a few minutes before use and then wetted down occasionally during sharpening process. Diamond hones on the other hand are more durable than either water stones or oil stones and, because they generally have a more coarse grit, they cut faster than natural whetstones. Plus, due to their construction, they never need truing and, in fact, coarse diamond hones are often used to flatten both natural and synthetic whetstones.

Method 1: Use an Electric Sharpener. Quality electric sharpeners are an option, but I strongly discourage their use. First off, they remove a tremendous amount of material from your edge. Sharpen your knife a dozen times, and you've lost a good half-centimeter of width, throwing it off balance, and rendering any blade with a bolster (i.e. most high-end forged blades) useless.
