Some stones need water, while other stones need oil for floating the swarf (small metal filings created when sharpening) away. Simply apply a few drops of either oil or water directly to the stone. (We recommend using an inexpensive spray bottle for applying the water.) The lubricant you need is determined by the type of stone you are using. Water stones and diamond stones require water. Oil stones such as India, Crystolon and Arkansas stones use oil for a lubricant.
In recent years, some whetstone manufacturers have started producing ceramic whetstones made from hard, ceramic, powders that are mixed with Aluminum Oxide and then sintered to form a solid. But, rather than using oil or water to lubricate the whetstone, ceramic whetstones are meant to be used without lubrication and thus, they provide a significant advantage for chefs who need to keep their knives sharp but, who do not have either the room or time for using a bench water stone. Thus, they are commonly available as either bench stones, pocket stones, round rods, or triangular rods.

Keep in mind that this tool is meant for very heavy, high precision work. The metal filings that the 50008 collects very well also need to be cleaned often, ideally after every use. The Arkansas stones that the 50008 uses are known as “the world’s best finishing stones” for a reason: You can hone and polish your blades at the same time. Not only does this save you time, but it also improves your efficiency across the board.
As you probably have guessed, knives are easier to sharpen on longer stones. The width of the stone is less important than the length when sharpening knives. The longer stone allows for longer sharpening strokes and contributes to faster sharpening. The longer strokes mean fewer strokes across your stone, making it easier to maintain a consistent sharpening angle. As a rule of thumb, a small knife can easily be sharpened on a large stone, but a large knife cannot easily be sharpened on a small stone.
Removing the burr is fairly simple. You'll need a leather strop or block (this sort of thing), which is designed to catch the metal fibres from the knife. You could do it with a fibrous tea towel or some newspaper if you like, but I'd suggest going with leather to begin with. The motion is fairly similar to sharpening. Draw the knife over the leather, going away from the edge at roughly the same angle as when you sharpened. 
Don't know. Not sure that I really care, as these stones definitely did the job that was asked of them, and did it with ease, even for a beginner whetstone user. I'll probably stick with them, at least until I get a lot more experience. Though, I do see a 10,000 or higher grit stone in my immediate future - more to play around with, than a feeling of genuine need.

The most important aspect of a sharpening stone is the grit. Rather, a honing rod helps keep a blade’s edge keen between sharpenings by straightening out the tiny dings and dents caused by everyday slicing and chopping. Honing is a simple and fast process—it takes just a few seconds—and it can extend the life of a sharp edge for weeks or even months. Eventually, however, the edge gets rounded over and dull; then it’s time for a complete resharpening.
The truth is that there is no one recommendation that we can make that will meet everyone’s needs. Every sharpener’s needs are different and every sharpening toolkit will be different. In order to help beginning sharpeners get started with good sharpening stones to build around, we need to understand their individual needs. I am new to sharpening my own blades using a whetstone but this product seems to do a pretty good job even considering my rudimentary technique. It is large enough to work well for a wide range of blade sizes and comes with a nice holder to keep it from moving while sharpening. I was able to get some pretty good edges so I would imagine someone with more experience using this type of product would be able to get some scary sharp edges using it. The only issue I had other than my own lack of skill was that the 1000 grit side seems to be wearing down fairly quickly. I don't know if this is normal or due to something I am doing but if this continues I don't see the stone lasting for many uses and I thought this would be a long lasting product. Again this may be due to user error so please take this with a grain of salt. Overall I think it's very capable and if long lasting an excellent tool for keeping all your blades sharp.

As they are made from diamond they are very expensive which is their only downside. But if you can get one of these they will serve you for your lifetime easily without any doubt. You’ll know you’re reached a stopping point when you can feel the slight catch of the bevel on the edge of the blade, by carefully running your finger in the direction of the blade, or by cutting through a sheet of paper. The speed and polishing ability of waterstones attract many sharpeners. Waterstones sharpen quickly and are available in fine polishing grits not found in other stone types. The ability to flatten the stones is a necessity when sharpening with waterstones, so a starting set should include a flattening stone of some kind. You need the right size of sharpening stone that fit the type and size of your blades and tools. In general, 6-inches stones are the smaller models and 8-inches are the larger ones. The stones larger than 8 inches are work best for big-sized blades and tools. You may also find sort of ‘pocket knife sharpener’ out there. Most of the credit card sized sharpening stone are smaller than 6 inches and ideal for on the go sharpening not for regular basis.
To summarize, Shapton Glass 500, 1,000 and 2,000 is a good combination and if you would like to throw in the 4,000 grit stone in lieu of the 2,000 that is good as well. If your knives are very hard, ZDP 189 for example, this is a fantastic choice. (They are also excellent for tools, chisels etc. and they are the premier choice for many Straight Razor honers).
Therefore, the first step to choosing a whetstone is to determine your intended purpose and then choose your whetstone accordingly. For instance, when sharpening tools that do not require a fine edge, you should choose a relatively soft, coarse, stone such as a Norton Crystolon water stone. However, for sharpening tools that do require a fine edge, a somewhat harder Norton India oil stone would be a good choice. But, for sharpening hunting knives where an exceptionally fine edge is required, a Novaculite or Coticule oil stone would be the best but, most expensive, choice. So, the process of choosing the correct whetstone for any given purpose is to first determine how fast you would like for the stone to cut and how fine an edge you need, and then choose either a soft, coarse, stone or, a hard, fine, stone of the appropriate type and grit.
Protip: As you use any synthetic sharpening stone, including the King Medium Grain Sharpening Stone, you will need to level out the middle of the stone with a stone fixer. The middle of the stone will naturally become concave over time. Fortunately, this does not happen as quickly with the King Medium Grain Sharpening Stone as with other products in its class.
Historically, there are three broad grades of Japanese sharpening stones: the ara-to, or "rough stone", the naka-to or "middle/medium stone" and the shiage-to or "finishing stone". There is a fourth type of stone, the nagura, which is not used directly. Rather, it is used to form a cutting slurry on the shiage-to, which is often too hard to create the necessary slurry. Converting these names to absolute grit size is difficult as the classes are broad and natural stones have no inherent "grit number". As an indication, ara-to is probably (using a non-Japanese system of grading grit size) 500–1000 grit. The naka-to is probably 3000–5000 grit and the shiage-to is likely 7000–10000 grit. Current synthetic grit values range from extremely coarse, such as 120 grit, through extremely fine, such as 30,000 grit (less than half a micrometer abrasive particle size).[citation needed]
However, due to limited natural deposits and extensive quarrying over the centuries, true, high quality, Japanese water stones are now few and far between and are very expensive. Thus, various companies are now producing synthetic Japanese Water Stones which generally have a more consistent composition and grit size than natural stones as well as often begin somewhat harder and thus, lasting a bit longer; not to mention being cheaper to purchase.
Frequently, our recommendation for beginning sharpeners is to start with diamond stones as their strengths make them ideal to build a sharpening toolkit around. Diamond stones are low maintenance and durable, lasting many years with only occasional cleaning. They are among the fastest stones to use making them time efficient. Diamond grit will handle even very hard steels, and diamond stones can be used for flattening waterstones. All these things make diamond stones a practical foundation for your sharpening toolkit.

Aesthetics – While it’s true that most people keep their sharpener, (even their expensive mechanical sharpeners) in the drawer until it’s time to use them you’ll still want to be aware of whether your sharpener fits into the overall aesthetic of your kitchen when you do take it out to use. While sharpener designs are fairly limited to be sure you typically have some control over the color and finish of the device as well as design factors like whether the device is boxy or rounded in appearance. With a stone sharpener or a stick however you pretty much get what you get.

Selecting the proper coarseness for your sharpening stone is an important first step in sharpening your knife. Not every knife needs to start at the coarsest stone you have, on the other hand a very dull knife can not be sharpened on only your finest stone. Starting with the proper coarseness will ensure that you achieve the edge you need quickly. If your knife is very dull or has a nicked blade, start with your coarsest stone. The coarse stone removes material quickly so a poor edge can be refined quickly. However, the coarse stone must be followed up with your finer stone to refine the edge. If your knife is only slightly dull and just needs a quick touch up, starting at a medium or fine stone can save you time. Starting on a fine stone requires fewer steps but must only be used on an edge requiring little work.
Oilstones, like the Norton whetstone, can be made out of natural or synthetic material like Novaculite, Aluminium Oxide, or Silicon Carbide. As per the name, oilstones require the use of oil as you sharpen your knife's blade. This type of stone is slower at sharpening or honing a blade and it can be messy and you need to always have some oil on hand but it creates a nice sharp edge and a beautiful polish.
