Silicone Carbide whetstones on the other hand, are the fastest cutting of the three types of oil stones and the stones made by Norton are called Crystolon Stones. Also they too are graded as either fine, medium, or coarse stones depending on their grit. But, although these stones will not produce an edge as fine as Arkansas Oil Stones or India Oil Stones, their fast cutting ability makes them ideal for sharpening tools as well as for cutting the initial edge bevel on extremely dull knives or repairing the edge on damaged blades. Last, because they sharpen so quickly, it a common practice to start with a coarse Crystolon Oil Stone and then progress to either a medium or fine India Oil Stone and then to finish with an Arkansas Oil Stone.
Repeat the process on the opposite side of the blade, this time with the edge facing down, index finger on the spine and thumb on the heel. Because the direction of the edge has changed, you’ll now be applying pressure when swiping up. To ensure consistent pressure, avoid switching hands. Grind the full length of the blade along the whetstone, and check for a burr.
In addition, there are three broad grades of Japanese Water Stones consisting of the Ara-to (rough stone), the Naka-to (middle/medium stone) and, the Shiage-to (finishing stone). However, it should be noted that the various grades of natural Japanese Water Stones vary widely in both density and grit size from stone to stone and thus, they do not translate well to American or European abrasive standards. Furthermore, because they are significantly softer than Novaculite, Japanese Water Stones must be flattened more often and do not last as long as a either Novaculite or Coticule stones. But, because they form a slurry of fine particles when used, they also do a superior job of both cutting and polishing.
Contrary to popular belief, the whetstone is not called so because it is soaked in water prior to sharpening. To whet an object means to sharpen; the soaking step aids in priming the stone for sharpening. The process of sharpening a blade with a whetstone is aptly called stoning. The water combines with the small particles in the stone to create an abrasive surface to grind the blade.

If you are searching for a hard black Arkansas or hard translucent stone, you will surely have difficulty finding them because they are extremely rare and very expensive. Most individuals choose the India stone, which is a manmade stone that is constructed out of aluminum oxide, over the other options because it produces the finest edge and offers a very quick cut.
Here is what you need to get started and it does not begin with the tangibles. Success will come quickly if you understand and can visualize what it is you are attempting to do, what has to happen to make a knife sharp. My experience is with Japanese Water Stones but the same will hold true for other methods. I do not recommend pull through gadgets or electric grinders of any type by the way, I am opposed to those methods although I understand the desire to try everything out… remember, I thought I needed everything and I thought everything worked.
I give Sharp Pebble a top rating for two reasons. First, the company emailed a user guide for me to review and learn how to best use its product while it was being shipped to me. Wonderfully proactive. Second, the sharpening stone did a terrific job restoring the edge on my kitchen knives that had been woefully neglected. Ever rent a house and every knife in the kitchen has the edge of a butter knife? I was almost there. Now, the knives are cutting beautifully. I have only one suggestion for Sharp Pebble. While the stone includes a useful angle guide that can be attached to a blade and the guide gives clear steps on prepping the stone and how to hold the blade when sharpening, it does not illustrate the manner in which the blade needs to be moved across the stone. I had to go to Youtube to get some tips on the exact method. I have historically been very bad at putting an edge on a blade due to ignorance primarily. Understanding Grit: You’ll see a bunch of numbers being thrown around when discussing the grit of a sharpening stone. The number refers to the size of the grit. The larger the number, the finer the grit. A good beginner stone would be a two-sided stone with #400 and #1000 grit. An important but often confusing area of sharpening is knowing when you're done with one stone and ready for the next finer grit. On coarse stones it is very easy. When you sharpen one side you will notice a burr forming on the opposite side of the edge. This burr is hard to see but is easy to feel. Very carefully feel for the burr by gently running your hand from the spine to the edge. (Do not run your finger along the knife edge from heel to tip, that's only asking for trouble!) A burr is formed when your stone removes material directly at the edge. The burr will move from one side of your knife to another as you alternate sharpening sides. Make sure you have felt the burr jump between both sides before you move on to the next finer stone. That will ensure that you have sharpened both sides effectively. The finer grits are done the same way but the burr is much smaller. On the finest grits you may not be able to notice the burr at all. Testing the knife sharpness will tell you when you're done. (Learn how you can test to see if your knife is sharp.)
Step 3 is to use lots of water, while rubbing the water stone over top of the lapping plate. Running tap water will be your best option, but if this option is not available you will need to keep the stone plentifully saturated with water. Make sure that you use random circular motions, while covering the stone’s surface completely. Randomly wash away the abrasive material, if you are not using running tap water, because you do not want it to interfere with the flattening process. You can pick up the water stone to see if the lines are wearing away, which they should, if you are doing the process correctly. Of course, the lines on the outside edges will wear away first, because they are higher than the center portion of the water stone.

The stones work pretty well if your knife has a decent edge already. If your blade is butter knife dull, start with coarser grits and work up. Also will depend on the quality of metal your knife is made of. I can get my wood carving blades sharp enough to split hair but I can only get my cheap pocket knife moderately sharp--it'll shave you but it takes some effort. Before we start, I want to make clear that there are dozens of different ways to sharpen a knife. Everyone has a way they think is best, and men have all sorts  of techniques and tools that they feel are essential in getting a sharp blade. In the end, much of it comes down to personal preference. I’m going to show you the way I learned how to sharpen a pocket knife. It’s very basic, good for beginners, and best of all, it works. If you have an alternative method that you prefer, great. 3. Place the knife blade flat on the stone and raise it to a 10 to 15 degree angle. The key to knife sharpening is maintaining a constant angle. Different knives require different sharpening angles. For a pocket knife, shoot for a 10 to 15 degree angle. This will give you an edge that’s sharp enough for most daily needs, but not sharp enough to perform heart surgery.  Keeping a constant angle by hand takes a lot of practice. If you’re having difficulty, you might consider investing in a sharpening guide. It takes all the guess work out of maintaining the needed angle. They cost about $10.

Now it's time to polish. This is when you'll swap over from the coarse grit to the finer grit (make sure this side is wet, too). I found the knife still had a bit of grime on it, so I gave it a wipe clean beforehand. The motion is exactly the same as with sharpening, but you can apply slightly less pressure, and limit to roughly 30 strokes on each side. 
Rest your knife on the stone at your chosen angle. An easy method for determining the angle by eye is to visualize a 45 degree angle and then take half that amount. That will give you a ballpark estimate of the angle and then you can adjust accordingly up or down. With a slicing action bring the length of the knife across the stone with a motion that starts with the heel of the knife on the stone and ends with the point of the knife. The motion should resemble a sweeping arc pattern across your stone. Be very careful to maintain the angle of the knife on the stone. Longer curved knives provide additional challenges but as long as you can maintain the angle you will be sharpening very effectively. Repeat this process on the other side of the knife and continue repeating until you have sharpened your knife though all your stone grits.

We get asked regularly to recommend stones for the beginning sharpener. Everyone wants to get stones that will be of the most practical use. No one wants to waste money on something they will have to replace later. The goal is to get stones that can be used as a foundation for your future needs. But the number of options available can be bewildering to the inexperienced sharpener, leaving many wondering where to start.


Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.

A single stone of 120 grit and a combination stone of 1000 and 3000 grits come along with a stone holder all for a price of less than many other individual stones. The stones are 6 7/8" long and 2 1/8" wide. A flattening stone of some kind would be needed, but with economical options available in those, the overall price of this kit would still be low. This entry level set is a good budget minded option.


Begin with your lower-grit stone. Place the heel of your knife on the far edge of the stone, holding the blade gently but firmly with both hands at a 15- to 20-degree angle. Using even pressure, slowly drag the knife over the stone toward you down the length of the stone while simultaneously moving the knife such that the contact point moves toward the tip of the blade.
