I give Sharp Pebble a top rating for two reasons. First, the company emailed a user guide for me to review and learn how to best use its product while it was being shipped to me. Wonderfully proactive. Second, the sharpening stone did a terrific job restoring the edge on my kitchen knives that had been woefully neglected. Ever rent a house and every knife in the kitchen has the edge of a butter knife? I was almost there. Now, the knives are cutting beautifully. I have only one suggestion for Sharp Pebble. While the stone includes a useful angle guide that can be attached to a blade and the guide gives clear steps on prepping the stone and how to hold the blade when sharpening, it does not illustrate the manner in which the blade needs to be moved across the stone. I had to go to Youtube to get some tips on the exact method. I have historically been very bad at putting an edge on a blade due to ignorance primarily. But with the help of the video and a good stone, I did an effective job. The base does a great job of holding the stone in place and is attractive in the kitchen.
Sharpening stones are generally less portable than a handheld device, but stones give you more control over the angle of the blade to the sharpening stone. Sharpening systems can include a set of several different sharpening hones. Often, there are at least three stones, including a coarse stone for setting a new sharp cutting edge on very dull or damaged blades, a fine stone for general-purpose sharpening and a natural Arkansas stone for finishing and polishing the cutting edge to a razor-sharp point. Stones can be attached to a stand with a trough on the bottom for easy cleanup or they may stand alone.
Before I even begin discussing much else about this sharpener I would like to take a moment to discuss its four sharpening slots. Upon reading consumer reviews, I found that many people were confused by the fact that there were four slots and mistakenly believed that this was a four stage sharpener. This is a two stage sharpener. It has one stage with a rough grit and one stage with a fine grit so that you can adjust the type of sharpening to the dullness of the blade.

Sharpening by freehand takes time to learn and you need to manage your expectations, as long as your water stones are flat and decent quality you should be able to get a nice edge, soon. A small knife, such as a paring knife is actually a little trickier to sharpen in my opinion so start with an 8″ Chef knife of decent quality. You are probably not reaching the edge of the edge of your knife, and perhaps not raising a burr with the first stone. You need to raise a burr on both sides of the knife before it will get sharp. Paint the edge and bevel with a Sharpie and with gentle pressure try to remove that sharpie mark on the water stone, this will help you hit the target area and remove the fatigued metal. Remember, we humans are pretty nifty sometimes. I found that my muscle memory was providing me with the opportunity to create edges that really forced me to compare with the edges off of the Edge Pro. It came to me that the Edge Pro had made me a better freehand sharpener, My confidence level had been boosted and with knives to sharpen daily, I was getting more comfortable with sharpening freehand every day, I was improving. What about electric sharpeners, there are some expensive and well built machines out there that claim to sharpen knives. I have seen the edges off of these machines and I can agree that they have the ability to sharpen a knife. However, at what expense to the knife and also, do what degree of sharpness? I believe that there is a place for these, not in my world, but there are circumstances where they can come in handy. Let’s face it, there are people who need sharp knives at their workplace, sharp enough to get the job done, and they may not have any interest in the process just the results. At least they are doing sometime that stops them from using dull knives. It is also possible that people who run a knife through and electric grinder and are impressed with the result have never seen a truly sharp knife. I don’t think that the folks who use these devices believe that they are creating world class edges, they just need “sharp” and need it fast so why not. Yes, the machine is likely removing more metal than necessary but, in some cases, it can still work.
Note that, unlike steel honing rods, ceramic hones need occasional cleaning, as particles of knife metal build up on their surface (they form a gray layer). Idahone sells a “Superaser,” but on knife forums, many owners of ceramic hones recommend generic melamine foam sponges as a more economical alternative (the Mr. Clean Magic Eraser is the famous name-brand version). Messermeister, the maker of one of the other ceramic hones in our test, recommends a mild abrasive cleanser, like Bon Ami or Bar Keepers Friend, advice that is also echoed by many knife enthusiasts.

The paper test - Remove your knife from the sharpener. Grab a piece of notebook paper and hold it vertically in your hand so that one edge is facing straight up. Now take the knife and push it down against this edge. If the blade cuts through without hesitation it’s sharp. If the paper simply crumples beneath the blade instead of cutting the blade needs a bit more work.

The only thing that I did not like about this stone is that it comes with a 1000 grit and 4000 grit stone, in my opinion those are both fine stones. When I'm sharpening, I like to have something in the range of 500-800.

For instance, although they are often the most expensive type of whetstone, diamond hones generally cut the fastest even in their finer grits followed by Crystolon Stones and then India Stones which are then generally followed by Japanese Water Stones and then by Novaculite, Belgian Blue, and Coticule whetstones in terms of how fast they remove metal. However, it should also be noted that the rougher an edge is, the less sharp it is while, the more polished an edge is, the sharper it is and thus, rough edges are fine for some tools while other tools require a much finer edge and, hunting knives require the finest edge of all. Therefore, the trick to choosing the proper whetstone for any given sharpening purpose is to purchase multiple stones with varying grits to accomplish each given task from cutting an initial bevel or defining a damaged edge to refining an existing edge to polishing it. In addition, there are three broad grades of Japanese Water Stones consisting of the Ara-to (rough stone), the Naka-to (middle/medium stone) and, the Shiage-to (finishing stone). However, it should be noted that the various grades of natural Japanese Water Stones vary widely in both density and grit size from stone to stone and thus, they do not translate well to American or European abrasive standards. Furthermore, because they are significantly softer than Novaculite, Japanese Water Stones must be flattened more often and do not last as long as a either Novaculite or Coticule stones. But, because they form a slurry of fine particles when used, they also do a superior job of both cutting and polishing.


That's what this was about for me, time. I had five kitchen knives, and about a dozen pocket knives in a box that were virtually unusable. They had been sitting in a box (except the chef knife which I used regularly) that I'd toss them in with the "I'll sharpen them later" mentality.
