Many Stages – Some of these machines are equipped with more than a single process, during the sharpening stage. For instance, some will have a slot for a stropping stage and another slot for the polishing stage. Others are equipped with three stages for an even more precise sharpened edge. Be sure to inspect each of these options, in order to find one that peaks your interest and suits your preferences.

Typically, you will first need to clamp the blade into place and tighten a knob, in order to secure it to the system. After this, you’ll need to work to adjust the angle. This is generally controlled by a little knob. Once you’ve selected the angle, you will be able to lock it into place to ensure that the angle is maintained throughout the sharpening process for a much more consistent edge.
When I set out to look for the Best Electric Knife Sharpener, I told myself that I needed to find one which would make someone’s life easier. I didn’t want to just pick something because it was affordable, because a lot of people liked it, or because it did one really cool thing. We have been using this for just over four years, and wish more than anything I had known about them years ago. SO much faster and easier than the old whetstone and oil method, and a lot more efficient than the ceramic-type ones that I've tried - and, much less expensive than either of those. The blades are reversible, and then replaceable - easy, and inexpensive.
As noted previously, this automatic knife sharpener uses precision angle sharpening guides, which makes sure you obtain the proper angle with every use. It comes with two guides, which are the 50° guide and the 40° guide. The 40° guide is mainly used for thinner blades as well as kitchen knives. On the other hand, the 50° guide is used for outdoor and hunting knives.
This impressive Chef’s Choice sharpener is not the only Chef’s Choice sharpener on this list. That must tell you something about its quality. I must say that I was very impressed with this sharpener. It features three stages: rough, fine, and hone. The first two stages use sharpening discs with diamond flecks as abrasives. They gently file down your blade, bringing it to a smoother, sharper point. Stage three features patented honing and polishing discs designed to straighten your blade for the sharpest, cleanest cuts possible. Its rubber feet keep it firmly planted upon your countertop for an easy and safe sharpening process.

The other crowd that says "this thing is a knife-destroying piece of junk!"... those folks are right too. Yes, this will take a cruddy old dull knife and put an edge on it. It won't put an edge on it properly though and it's far too aggressive. If you drag a good knife through this thing you'll do more harm than good. If you have nice knives you must either undertaken learning how to sharpen them yourself (I use the ol' Japanese whetstone method because I find the whole affair to be meditative and fun) or just send them out to be sharpened. There's no shame in not wanting to do it yourself and have a pro do the work.
Whether they were professional testers or home users, reviewers sometimes found it a bit unnerving to pull the AccuSharp over an exposed knife blade with nothing but its plastic guard as protection. Once they got past that, though, they found it produced a sharp edge quickly and easily. Workers in a prominent test kitchen found it especially handy for quick touch-ups, since it's small and light enough to fit in a drawer.
Once that is done, you would proceed to start the sharpening process with a coarse grinding wheel. This is made of saphirite and helps create the proper angle. The 2nd stage involves moving on to a medium grinding wheel to give precision. The 3rd and last stage is sharpening on the fine slot. This sharpens your knife to perfection with an ultra-fine-grit ceramic wheel that sees to it that your blade is polished to an exact, razor sharp edge.
The kind of tech we love: compact, reliable, durable, attractive and cheap. Purists may feel that other sharpeners will produce a more perfect result but for 99% of the human race this sharpener will be everything the doctor ordered. Your blades stay sharp for a good long time thanks to the 2-stage sharpening process and if you’re a left handed chef you’ll love the fact that it works just as effectively for you as for anyone else.

Aluminum-Oxide oil stones are very popular man-made sharpening stones produced by an abrasives company called Norton and which are commonly called India Stones. Generally less expensive than Arkansas stones (aka Novaculite), these stones are graded coarse, medium, and fine and are designed for fast cutting. Yet, when the fine grit is used, they can also produce a relatively fine edge. Also, because India Oil Stones are both softer and coarser than Arkansas Stones, they are commonly used in conjunction with Novaculite to cut the initial edge bevels or, repair extremely dull or damaged edges before refining and polishing the bevel with an Arkansas Stone.
