The 8,000 grit Kitayama is definitely a popular 8K stone, it is my favourite, and the feedback has much to do with that. It is silky smooth and feels creamy when you use it. When reaching refinement levels of 6k and above, polished bevels/edge are inevitable, and often sought after. The level of polish from this particular stone is very beautiful, assuming that you have done some refinement prior to this but it is a wonderful 8,000 grit stone.
Just got this, I work in and industry setting and use a sharpening stone and have had the plant mechanical sharpening equipment used on my knives worn out, beat up and worn down. Most electric sharpeners use a 2 or 3 step process to create, sharpen and hone the edge of your blade. The first step in the sharpening process involves using a coarse grit, which sharpens extremely dull or damaged blades. A: You can sharpen your knives by hand using a stone or you can use a manual powered 1-stage, 2-stage or 3-stage sharpener or you can use a multi-stage electric powered sharpener. The choice is yours. Many people prefer not just the affordability but the precise control they have with an oil or water stone. While others opt for the more predictable results they get from an electric powered sharpener. It’s really a matter of taste.
2. Although I’ve been sharpening knives for a while, I never could get a knife sharp using the freehand method, I’ve had to rely on various jigs to set & maintain a constant angle to the bevel. To begin with, the Lanksy knife sharpener kit was my main tool, but then I found a South African jig made by Warthog Knife Sharpeners. I still have their first model, which, if memory serves me, came out in the late 1990’s. This has since been upgraded & is supplied with a diamond stone, which is worthless unless it’s going to be used for ceramic knives. However-the Warthog & the Warthog Multi-Blade’s modus operandi has the knife moving ABOVE the stone, unlike the Lanksy / Edge Pro / Edge Pro Chinese copies & variants. ( No oil / water dripping off the stone from above the knife). Also, the Warthogs use any bench-size whetstone available to its owner, a very big plus if you want to use your grand-dad’s old Arkansas stone.No tie in having to buy the manufacturer’s specialised stones which work only with one type of sharpening jig.
But this time, you don’t just get a 15-degree angle for Asian knives and contemporary American and European-style knives. For traditional American and European-style knives, you can also create or restore a 2-degree angle. That’s what the 1520 in the name is all about. You can use stage 1 and stage 3 for a 15-degree angle. For the 20-degree angle knives, you’ll use stages 2 and 3.

The third and final stage involves the use of the unique flexible abrasive stropping disk system. If you’re familiar with the barber strop (if only in the movies), then this is just the high tech version of that. And it creates a non-serrated ultra-sharp edge that’s smooth on a microscopic level. This results in the 3rd and even smaller bevel of the arch-shaped edge.
“I have been looking for a larger sharpening stone, so I was pleased to find this 12-inch stone. As some others have reported, while this states it is a fine stone, it is not. It has two grits, and one is very coarse, and I would rate the other as medium. I have a fine stone to finish the process, albeit a small one, but it works. I think it's all about having correct expectations. If you're expecting this sharpener to give you the same edge that a professional can give you, or if you're expecting the same edge that you can get with 30 minutes on multiple stones, then you might not be super happy with this. With just a little bit of practice though, you can get a really nice edge on your knives in less than three minutes.

But if the edge it produces isn’t the absolute best (that honor goes to the Trizor XV), why consider the Brød & Taylor? Two reasons. First, its footprint is small enough—4½ by 3½ inches in breadth and depth, and 6½ inches high—that you can keep it on the counter, meaning you’ll be more likely to hone your knives every time you use them, a good practice that too few people are disciplined enough to follow since it generally means pulling a knife steel out of a drawer or knife block. Second, this sharpener is so elegant to look at and so simple to employ that it almost encourages you to use it. Whether you respond accordingly is a matter of personal taste and dedication, of course, but knowing our readers, I’m sure at least a few value such things highly.
Sharpening kit: Sharpening kits appear at the top end of the market for knife sharpeners, as they have multiple parts to ensure a proper result. The kit allows you to set the sharpening angle you want to use, while working from course to fine sharpening. Sharpening kits work great for both sharpening and honing. Using a sharpening kit properly requires some time invested in learning to use the kit. However, for those who demand a perfect blade, the sharpening kit achieves the desired result with full manual control.
Another factor that launches Stage 2 ahead of a standard steel are those 2 handy guide slots for the left and right sides of your blade. These slots are perfectly angled to ensure proper contact between the blade edge and the miniature rod, and this in turn creates razor sharp micro-serrations. Trying to hit this sweet spot angle on your own takes tremendous skill, and if you miss by just a little bit all you’re doing is dulling the blade, or simply rubbing the face. So why not use Stage 2, eh?
If you want a quality sharpening tool, this is the product to go for. This is why we have rated it as number one due to the incredible service that it will offer you, comes with an ergonomic design that gives the user a secure and comfortable grip. It sharpens knives very fast and more efficiently. It has two stages of sharpening thus providing a chance to sharpen thick steel blades and the softer steel blades.
For this guide, we limited our focus to manual and electric sharpeners. Such models are by far the most popular choices for sharpening knives, and for good reason. When well-designed, manual and electric sharpeners are effective, extremely quick and easy to use, and durable. (By the same token, when poorly designed they’re cumbersome, flimsy, and ruinous to blades.)
TO USE: Soak stone in water for no more than 5-10 minutes. Place stone on a damp cloth with the courser 400 grit side (dark green) facing up. Hold the knife so that it’s flat and perpendicular to the block, with the blade facing left. Holding the knife at a 20-degree angle, slowly sweep the edge of the blade from left to right down the length of the stone and continue until sharp. If stone starts to feel too dry, add more water. Be patient and take your time. Flip knife over and repeat on the other side (now moving from right to left). Be sure to sharpen both sides evenly. To polish the blade further, flip stone over to the fine 1000 grit side (light green) and repeat the process. When blade is honed to desired sharpness, wash and dry your knife. To clean your stone, simply rinse with water, wipe away any remaining metal residue with a rag, rinse again, then dry.
A: Most chefs have their own personal favorite and that’s what it comes down to for just about everybody; personal choice. If you’re the kind who likes to get personally involved in the process you might want to opt for a stone or stick knife sharpener.  These will allow you a certain amount of satisfaction knowing it was your expertise that produced the razor sharp edge. Others, however, are quite content to let the machine do the work and that’s fine too.
Electric sharpeners are not small. They can range from about 6 inches long to over a foot long, and about 4-6 inches deep. They must be taken out and put away again. A stone or steel takes up inches in your drawer and can be taken out in an instant. It can seem like a chore to get the electric knife sharpener, plug it in, then put the machine away again. People often describe the Trizor XV as putting a 15-degree edge on a blade, but the reality is a bit more complex. More convincingly, the testers at Cook’s Illustrated and America’s Test Kitchen use the Trizor XV on all their knives and actually convert 20-degree knives to the Gothic Arch Edge. (Europe’s medieval cathedrals, too, attest to the strength and durability of the Gothic-arch form.)
From the look of it, one can easily tell that it is designed to deliver the user comfort when using it, safety and great results. The knife sharpener is made of quality ABS material that does not rust. The base is flattened, and it is non-slip in nature. The user enjoys two stage sharpening system from this product. This makes it easy to operate and also sharpen the knives. You can use it for steel straight blade kitchen knives.
Once the knife is secured into the vise properly using both set screws you then slide one of the diamond stones onto the sharpening guides. Once the stone is on the guide you then attach the angle cube to the stone (it attaches automatically as the angle cube has magnets on it). With the angle cube you can adjust the angle the guides are set at to your particular preference (I prefer 36 inclusive myself).
In narrowing our choices down to a manageable number, we consulted reviews and expertise on professional-knife sites (including Chef Knives To Go and The Epicurean Edge), as well as on Amazon and other retailer sites. We consulted with Wirecutter staff for their preferences and concerns. And as is often the case, Cook’s Illustrated proved to be a valuable resource with its in-depth sharpener tests and reviews (subscription required). Finally, we used factors such as manufacturer warranties and product availability to refine our choices, and in the end we had seven models—four electric, three manual—to test.
The diamond material is very durable and equipped with a metal plate that has tiny diamonds engraved in it, which may or may not contain surface holes. The diamonds with holes are more common and capable of sharpening the knife while the holes capture the swarf. This design is preferable because the swarf can decrease the effectiveness of the stone and prevent the blade from getting a precise sharpness. This feature will also offer the user a much quicker and more effective cut.
A nearly foolproof manual sharpener that looks like modern art, the angle that the knife is inserted into the sharpener determines how aggressive the sharpening is (yes, there is a correct angle for sharpening your knives). You can start by sharpening the knife then hone it to a fine finish in the same slot. If the knife doesn’t need sharpening, you can use this for honing only. This sharpener self-adjusts, and sharpens the knife edge to its original angle, so you don’t need to know the edge angle to sharpen the knife correctly, and there’s nothing to adjust. The tungsten carbide sharpeners will last a long time, but can be replaced when necessary.
Knife Sharpening is an important service. Everyone uses knives, dull knives are terrible, so we need to be able to fix that. You need to find a method that fixes that, I found mine a long time ago. That doesn’t make me a better sharpener than anyone else, but I’m a happy sharpener and that makes me a good sharpener. If you like to use a series of belt sanders and stones to get your knives sharp that is fantastic, you are keeping your knives sharp.

Overall, these systems are highly innovative, effective and can sharpen or hone your blade to perfection. Are they a little more expensive? Yes, but serious knife enthusiasts will find that the extra cost is ultimately worth it for the increased benefits. This doesn’t mean that this type of system will be the right knife sharpener for you though. Instead, you’ll need to know exactly how and how often you will be using the sharpener, before you make your decision.
Remember, we humans are pretty nifty sometimes. I found that my muscle memory was providing me with the opportunity to create edges that really forced me to compare with the edges off of the Edge Pro. It came to me that the Edge Pro had made me a better freehand sharpener, My confidence level had been boosted and with knives to sharpen daily, I was getting more comfortable with sharpening freehand every day, I was improving. That was about four years ago, what about today.

Fancier manual models offer users more control over the sharpening process but also require more skill to use. Most manual sharpeners have no moving parts at all; you do the work by drawing the blade repeatedly across the sharpener's abrasive surface which may be a stone or a rod, or even a slotted system that you just pull the knife through.

Many electric sharpening units are designed with kitchen knives in mind. Our test of the Brød & Taylor turned a dull blade into one that effortlessly and cleanly sliced both tomatoes and paper. Due to the reputation of V-notch carbide sharpeners, however, I was concerned about the durability of the edge, so I did an additional test: I used the Brød & Taylor to sharpen my old pocketknife, which uses 440C steel, one of the earliest knife-worthy stainless alloys and one that more refined alloys have since surpassed. I then made 50 slices through a cardboard box, rehoned and repolished the knife (but did not resharpen it), and made 50 more slices. After all that, I was still able to slice a tomato and peel an apple without problem. That’s impressive: Cardboard is so tough on blade edges that knifesmiths use it as a kind of stress test.
