You need to adjust your fingers as you move the knife back and forth. Because sharpening takes place under your fingers, start with them at the tip and, as you pull the knife back toward you, release pressure completely and pause. Then, shift your fingers just a little down the blade toward the heel. This finger dance is critical and takes time getting used to.

And that leads to its main drawbacks. The slurry can be quite messy (especially in the kitchen) and the water stones wear out quickly. And perhaps the Woodstock made a mistake in making the 1000 grit and the 6000 grit layers of equal thickness. That’s because the 1000 grit surface wears out faster. It would have been better of the 1000 grit layer was thicker.


However, due to limited natural deposits and extensive quarrying over the centuries, true, high quality, Japanese water stones are now few and far between and are very expensive. Thus, various companies are now producing synthetic Japanese Water Stones which generally have a more consistent composition and grit size than natural stones as well as often begin somewhat harder and thus, lasting a bit longer; not to mention being cheaper to purchase.

Finally a sharpener that gets my kitchen blade REALLY sharp. I've bought countless blade sharpeners and this is by far the absolute best I've ever used.(and NO I am NOT paid by the company, just an amateur chef who loves a really sharp knife) This little beast is small for easy storage and the suction cup {so far} really grips any clean flat surface and doesn't slip at all once the lever has been pulled down. It only took me 3 slow pulls to get a deadly thin edge. We bought this for our parents as a little random gift to have at their home. I suggest using it for your cheaper everyday knives. It sharpens really well! The only drawback is that my husband noticed that eventually it bent some a few of the cheapo knives. The knives were cheap, but this sharpener ended up damaging them (but still got them to be sharper). If you don't really care for the little dings and changes to a small portion of your knife, as we don't with our cheap ones, it's still worth using! I suggest to only use them on your more inexpensive knives because I'm not sure how I'd feel using them on more expensive knives, because you really don't want to damage those in case it does the same thing to them!

My first set of sharpening stones so I have nothing to compare them to. For $50, though, great price to get into the world of sharpening. Stones are great and easy to use. Was able to put hair shaving edges on knives. Took a couple of knives to feel comfortable and better with the process and how to sharpen, but the stones you get work great. Here's the secret though. Get the green leather stoping block as well. As great as the stone are, I have found that stroping the knife after the fact is what really brings out that razor edge. And after using the knife, stroping it again, will restore and keep it razor sharp. Hope you enjoy it as much as I am.

These are unquestionably great starter stones. After all the sharpening done over the course of a couple days, they're still perfectly flat, showing little to no signs of wearing down. Mind you I did watch tons of how-to videos online before undergoing the endeavor, so I knew how to try to make the stone wear evenly. But, my 15 year old nephew who was working on the Ontario, as I told him he could have it, if he wanted to fix it up, didn't watch all those videos and I didn't see any uneven wear on his stone after working it about a half hour either.
