Honing steels are those instruments that look light a saber (light or otherwise) which you use to gussy up the edge of the blade periodically before using it. These do wear out every few years or less, depending on how often you use them. If you are unsure whether your honing steel is worn out run your finger around it. If it feels smooth all the way around then it’s time for a replacement. Not to worry though, they’re really affordable. One thing you may want to keep in mind about honing steels is that they typically won’t do much to hone the edge of some super hard knives, such as Japanese Global brand knives.

I’ve been sharpening knives since I was 9 or 10 years old, starting with a Browning pocket knife that I still carry. Manual sharpeners fall into two basic categories: those that use a V-shaped cutting notch, often made of ultrahard tungsten carbide, to carve a new edge onto a blade, and those that use fixed or rotating abrasive elements (either an abrasive ceramic or diamond-impregnated steel) to grind a new edge. In general you get what you pay for with both kinds. Cheap models under $20 get a lot of complaints about sharpening performance, ergonomics, and durability. I've only used it to touch up the edge on an ESEE RB3 and a pocket folder so far, but it has done very nicely for those tasks. I found that using the rounded edge works best for me in order to be able to run the length of the blade without hitting the leather lanyard. I'll hopefully try it out soon on fish hooks, too. Starting at the tip, glide the blade up and down the stone – around five strokes up and down is a good number. Then move to the middle – five more strokes. If no metal is being removed from the edge of the blade, it’s considered honing. Whereas if metal is being removed from the blade edge this is considered sharpening. Certainly, even honing will result in some microscopic amounts of metal being removed from the blade edge but not enough to be visible to the human eye, so the above definition is basically a solid one.

Knife sharpeners work by stripping away metal to form new bevels, ideally at an angle that closely matches the original. But you don’t need to obsess over getting the angle exactly right.
