The video above, from the How To You YouTube channel, explains everything you need to sharpen with a whetstone at home, and the best methods for doing so. Obviously, you’ll need a whetstone (as well as a few other things), and you’ll want to work near your sink or a bucket so you have easy access to water. Fill a container with water, then soak the whetstone in it until it stops bubbling. Inspect your blades for any trouble spots, and get to sharpening using the methods and motions described in the video; making sure to check your progress as you go. We’ve talked about sharpening knives with whetstones before, but this guide is a bit more thorough and the old video has since been removed.
To use Al's method, take a black felt pen and shade in the bevel of the knife. Then take two strokes on the stone and examine the edge. If you have maintained the proper angle then all the black will be gone. If you see black on the top of the edge it means you are holding the back of the knife too far from the stone. If there is black on the bottom of the edge but the top is clean then you are laying the knife too flat on the stone and you need to raise it a bit. Repaint the edge and try it again. Once you discover what the right angle looks like then just maintain that.
Just keep at it and concentrate, visualize that edge and bevel as you sharpen and keep in mind what you are trying to achieve. You need to do this on both sides, for me, I found that the hardest part, getting the other side of the knife to match the side I started on. I start on the right side of the blade at the tip and work my way towards the heel. When I do the “back” of the knife, I start at the heel and work towards the tip.
I enjoy these stones so much that the feedback is not a deterrent at all for me, I don’t even think about it. The results are always nothing but top notch, they deliver exactly what I want, some of the sharpest knives I have ever produced were sharpened on Shapton Glass stones. They may be thinner but they last a very long time, they are easy to maintain as well,
Oil stones have been around a long time, and while not as popular as in the past, they are still a practical option. Not as fast as the other stones, they are easy to use and their lower price makes them a good value for the budget conscious. With oil stones, the relation of the types and grits can be confusing. Our article, Difference in Sharpening Stone Materials, provides a more in depth explanation, but in general an India stone or two combined with an Arkansas stone is a good combination to start with.
Unfortunately, the arrays of modern whetstone can be bewildering to the inexperienced sharpeners that so often times many of them end up with a crap or wrong decision on stone type for their utensils. The most difficult to determine is whether the whetstone is fake or fabricated with low quality of materials. To avoid this you can only go for the reliable brand of a whetstone.
But it's a different type of sharp, according to Joe Authbert, product development manager at ProCook. "What it does is add tiny little micro-serrations onto the edge of the blade." But fear not - your smart knife won't end up looking like a bread knife, as you'll be hard-pressed to spot the serrations. "If you looked at it under a microscope, on the cutting edge, there are these little lines that generate the sharpness, rather than a waterstone which is a smooth sharp edge," says Authbert.
Removing the burr is fairly simple. You'll need a leather strop or block (this sort of thing), which is designed to catch the metal fibres from the knife. You could do it with a fibrous tea towel or some newspaper if you like, but I'd suggest going with leather to begin with. The motion is fairly similar to sharpening. Draw the knife over the leather, going away from the edge at roughly the same angle as when you sharpened.
It will be tempting to raise the angle here to get to the edge quickly, that is not the way to go. Re-paint the edge/bevel if necessary and try again. You can flip the knife prior to burr formation and work on the opposite side. Repeatedly feel for the burr with your thumb by running it very gently down the blade and over the edge, if the burr is there it will be very obvious, you need to create the burr along the entire length of the blade. Once you have done that, (you have accomplished what most people will never try) but besides that, you have to do the same to the other side of the blade.

A: We’re all told that a sharp knife is safer than a dull knife yet most everyone knows that merely touching a sharp knife can often result in a painful cut while we can wrap our hand around a dull blade with little worry. So why would anyone in their right mind claim that a sharp one is safer than a dull one? To a certain extent it’s a matter of semantics for sure, because there is no denying you have to be extremely careful around really sharp knives. But at the same time there is a very good reason to consider a dull knife to be more of a safety hazard than a sharp knife.
Choose the style of stone. You'll need to choose a natural or synthetic stone that can be used wet (soaked in water), with oil, or dry. There are also diamond stones that are actually very small diamonds attached to a metal surface. Stones that are soaked in water are softer stones which means you can quickly sharpen your knives. Unfortunately, these stones will wear down faster than the others. Oil stones are the least expensive and they're made of a harder material.
There will be a drawer that extends into the mechanism under the abrasives. Any detritus from the sharpening process drops into this drawer. Exactly where the drawer is located will differ from sharpener to sharpener but it shouldn’t be hard to find. Remove the drawer flick any material into the wastebasket and then wipe out the drawer with a damp cloth or tissue. You may want to use work gloves and goggles to protect your hands and eyes from any loose metal shavings. Once the drawer is clean and dry replace it. The exact means by which the sharpening mechanism itself is cleaned will vary from manufacturer to manufacturer. Consult your owners guide for specific details. Make sure you don’t introduce any grease or other lubricants into the sharpener unless specifically directed to do so by the owner’s manual. Also, the outside of the sharpener should come perfectly clean with just a damp cloth. Avoid using commercial cleaners or abrasives of any kind.
Why, then, do so many of us shy away from the task? To put it bluntly, it's because it's a rather daunting process for the beginner. Your image of knife sharpening may consist of a hyper-masculine chef slashing away violently at a steel rod (we're looking at you, Gordon). Conversely, you might have seen cooks meticulously and methodically stroking their blade up and down a Japanese waterstone with more intricate attention to detail than a Flemish landscape.
The smaller the angle between the blade and stone, the sharper the knife will be, but the less side force is needed to bend the edge over or chip it off. The angle between the blade and the stone is the edge angle – the angle from the vertical to one of the knife edges, and equals the angle at which the blade is held. The total angle from one side to the other is called the included angle – on a symmetric double-ground edge (a wedge shape), the angle from one edge to the other is thus twice the edge angle. Typical edge angles are about 20° (making the included angle 40° on a double-ground edge). The edge angle for very sharp knives can be as little as 10 degrees (for a 20° included angle). Knives that require a tough edge (such as those that chop) may sharpen at 25° or more.
You must put the knife blade's position at the perfect angle which is called "against the stone." What's important is the blade should be facing opposite from you. Where you've determined where the bevel angle is located, then this is what you will position against the stone. It's a good idea to know the differences between various angles for certain blade uses. There's a certain height of the blade that it should be from the stone. You'll be able to find various charts on height of the blade online. Normally, for a pocket knife or kitchen knife, it'll be 17° - 22° angle against the stone. The "Rule of thumb" is the smaller the angle, the sharper the knife. Most makers will have it in the instruction or on their official website.
So, as you can see, there are numerous different types and grades of whetstones on the market today and each has its advantages and disadvantages. Therefore, the right practice to choose the right sharpening stone for you is to choose a whetstone material based upon how fast you need to remove metal and how fine an edge you need. For instance, although they are often the most expensive type of whetstone, diamond hones generally cut the fastest even in their finer grits followed by Crystolon Stones and then India Stones which are then generally followed by Japanese Water Stones and then by Novaculite, Belgian Blue, and Coticule whetstones in terms of how fast they remove metal. However, it should also be noted that the rougher an edge is, the less sharp it is while, the more polished an edge is, the sharper it is and thus, rough edges are fine for some tools while other tools require a much finer edge and, hunting knives require the finest edge of all. Therefore, the trick to choosing the proper whetstone for any given sharpening purpose is to purchase multiple stones with varying grits to accomplish each given task from cutting an initial bevel or defining a damaged edge to refining an existing edge to polishing it. Over the course of two days I re-sharpened nearly a dozen old blades, including removing the secondary bevel on an old stainless Ontario saber-grind Navy diver's knife, convexing the edge on flat ground 1095 Schrade 55 that also came with a secondary bevel, and fixing a broken tip on an old Kershaw folder. These stones made quick work of the Schrade and Kershaw. Both had completely new edge geometry within 30 minutes apiece. The Kershaw looked like-new, as if the tip had never broken. And the Schrade cut much better than it's secondary bevel would previously allow, regardless of how sharp I got it with a ceramic rod and strops. The Ontario took a little more work, as it had been abused a little the last time I'd held it, over 25 years ago and was as dull as a case knife - one of the reasons I decided to go ahead and do a full saber grind - well, a slightly convexed saber, I suppose would be more accurate. But within under an hour of using the two stones and a couple leather strops (one with black compound, another with green), the Ontario was shaving sharp again too.
Put the pointed, narrow end of the sharpener up against the open end of the gut hook. The narrow, pointed end of the sharpener should face in toward the thickness of the blade, away from the edge of the gut hook. Match the angle of the sharpener to the original edge angle. This will maintain the correct sharpening angle and prevent you from getting cut by the blade tip. Hold the same angle when sharpening each side of the gut hook.
