Oil Stones differ from water stones in that they require the use of honing oil to float the swarf (metal particles). Also, these stones are commonly made from one of three different materials consisting of Novaculite, Aluminum Oxide (Corundum), or Silicon Carbide (Carborundum) and they all use oil to lubricate the stone and suspend the swarf in order to prevent the stone from becoming clogged. Also, while Novaculite and Coticule are the most traditional types of oil stones, there are also synthetic oil stones made by the Norton abrasives company called “India Oil Stones”.

We offer a series of oilstone packages that combine India and Arkansas stones and are very reasonably priced. At 8" long by 2" wide these stones are not as wide as some other types, but still wide enough for many edges and are plenty wide for knife sharpeners. Grinding is generally done with some type of sharpening stone. Sharpening stones come in coarse and fine grits and can be described as hard or soft based on whether the grit comes free of the stone with use. Many sources of naturally occurring stones exist around the world; some types known to the ancient world are no longer used, due to exhaustion of former resources or the ready availability of superior alternatives. Arkansas, USA is one source for honing stones, which are traditionally used with water or honing oil. India is another traditional source for stones. Ceramic hones are also common, especially for fine grit size. Japanese water stones (both artificial and natural) come in very fine grits. Before use, they are soaked in water, then flushed with water occasionally to expose new stone material to the knife blade. The mixture of water and abraded stone and knife material is known as slurry, which can assist with the polishing of the knife edge and help sharpen the blade. Generally, these are more costly than oilstones. Coated hones, which have an abrasive, sometimes diamonds, on a base of plastic or metal, are also available.

Ease of use – Most people in search of a mechanical sharpener want one because they don’t want to be bothered with trying to achieve a perfect edge themselves using a stick or sharpening stone. They want predictable, first class results every time. In that case it’s important that the electric powered device is easy to use, achieves results quickly and with little effort and is designed with user safety in mind. Keep in mind too that it’s easy to apply too much pressure when using a mechanical sharpener and when that happens you’re likely to see unsatisfactory results. In addition there are subtle differences between mechanical devices designed for Asian-style knives and those designed for Western-style knives. This has to do with the sharpening angle discussed above. Don’t get an Asian sharpener if you don’t need precise control over your cuts.

I recommend keeping two stones in your kit. One with a medium grit (around 800 or so) to perform major sharpening jobs, and one with a fine grit (at least 2,000) to tune the edge to a razor-sharp finish. For real pros, a stone with an ultra-fine grit (8,000 and above) will leave a mirror-like finish on your blade, but most cooks won't notice the difference in terms of cutting ability.
We’re happy to present something everyone has been waiting for – a combination diamond/ceramic whetstone that will handle all your sharpening needs. The newly-developed DC3 and DC4 whetstones consist of a fine diamond stone (25 micron) and a very special ceramic stone, made of synthetic sapphires. The advantage of these materials, although they get worn, will still keep their flat shape this is important when you sharpen your knife. And, since these materials are the hardest we know of, they will sharpen any steel, even these extremely hard powder steels. You don’t need any lubrication for these stone but now and then you should consider cleaning them with warm water and liquid soap. The stones might feel coarse from the start but will become smoother/better after some use. A leather pouch is included.
Choose the style of stone. You'll need to choose a natural or synthetic stone that can be used wet (soaked in water), with oil, or dry. There are also diamond stones that are actually very small diamonds attached to a metal surface. Stones that are soaked in water are softer stones which means you can quickly sharpen your knives. Unfortunately, these stones will wear down faster than the others. Oil stones are the least expensive and they're made of a harder material.[2]
In most cases a sharpening stone will be a combination of sharpening grains and a binding agent. However, in case of a Ardennes Coticule it is a completely natural product. The grains have cutting edges which enables them to sharpen your knife. As soon as a sharpening stone is used little pieces of the grains break off, revealing a new cut ing edge. The higher the number, the finer the grain. Stones with coarse grains (up to grain 400) can be used to shape the blade of a blunt knife. You can subsequently take care of the fine finish with a stone with a smaller grain.

If you only watch one person sharpen a knife, watch Jon Broida from Japanese Knife Imports. Extremely professional videos and easy to understand. If you do not remove enough metal to create a new edge, you will leave some of the dull edge in place. A dull blade (or a blade with dull spots or nicks) will reflect light from the very edge of the blade. A razor sharp knife edge will not show "bright spots" when you hold it blade up under a bright light. You will need to remove enough material from the sides of the bevel so that the edge stops reflecting light.
A: That depends almost entirely on how often you use them. If you are a professional chef who uses his or her knives every day then you should hone them every time you use your knives. But honing has its limits and over time your edge is going to become dull no matter what. Therefore your knives will need to be sharpened at least several times a year. Some chefs, in fact, will use a whetstone on an almost daily basis in order to ensure their knives are always razor sharp. Most of us, however, are not professional chefs and may not even touch our kitchen knives for days at a time. In that case, it’s probably a good idea to hone the edge after every couple of uses and have your knives sharpened once a year.
